If you’re doing a meatless Monday or just want to switch things up, these vegetarian dinner ideas go way beyond salads. I’ve got burgers, chili, tacos, pasta all the kind of meals that still feel filling and satisfying, even without the meat.

I try to work a couple of meat-free dinners into our week, and it’s a nice way to mix up the routine while still keeping things balanced. Many of these can be made ahead and frozen, which makes weeknights easier. This list has over 100 vegetarian recipes (and a few desserts) that show up often in our meal rotation.
