Once summer hits, I’m not trying to do a lot in the kitchen. Between the heat, the kids, and everything else going on, I just want meals that are quick, easy, and don’t make a mess. This list has a variety of summer recipes I actually use when it’s hot out, stuff like no-cook dinners, simple grilled meals, and cold desserts that don’t require turning on the oven.

Tips for Making Summer Recipes
Season cold food more aggressively than you think you need to. Cold temperatures mute flavor. No-cook dishes and chilled salads need more salt, acid, and seasoning than the same recipe served warm would.
Set up two heat zones on your grill. One side direct, one side off or low. It gives you somewhere to move things that are cooking too fast on the outside. Most people just use one zone and end up with burnt outsides and raw middles.
Don’t dress salads you’re planning to save. Store the base and the dressing separately. Once dressed, most of these fall apart within a few hours. The undressed base usually keeps 3 to 4 days fine.
Freeze frozen desserts longer than the recipe says. Most recipes say 4 to 6 hours. Overnight is more reliable, especially for no-churn ice cream. If you cut into it too early you’ll have soup.
Rest grilled meat before you slice it. Even a quick grilled chicken breast needs a few minutes. Cutting right off the grill loses most of the juice.
Freeze fruit before it turns. If you have berries or mango going soft, throw them in the freezer. They’re exactly what you need for popsicles or compote later.
