Hummus & Veggies Pinwheel sandwiches
This vegetarian pinwheel sandwich is packed with healthy ingredients and bold flavors. The combination of carrot, zucchini, and red pepper with creamy hummus makes for a delicious and satisfying sandwich roll-up.
ingredients you’ll need
- Tortilla: You’ll want to get the large burrito-size tortillas for this recipe. The smaller tortillas will work in a pinch but don’t roll up as well and will make fewer pinwheels.
- Hummus: I like to use homemade hummus, but you can also use store-bought.
- Carrots: Make carrot ribbons with your vegetable peeler for layering. You can also grate the carrots if you find that easier.
- Zucchini: A mandoline slicer comes in handy for thinly slicing the zucchini, but you can also use a sharp knife or vegetable peeler. I don’t recommend grating the zucchini since it has such a high moisture content.
- Red pepper: The pop of sweetness you get from the red bell pepper is a nice contrast to the other flavors in this pinwheel.
how to make Hummus Veggie Pinwheel sandwiches
- Place the tortillas on a large cutting board. Add the hummus to the tortilla, spreading an even layer all over the surface of the tortilla.
- Layer the veggies, zucchini, and carrot ribbons first, followed by the bell peppers.
- Take the bottom portion of the tortilla, and fold it about ⅔ of the way up and over the vegetables. Using your fingers, pull back on the folded-over portion of the tortilla to create the start of a tight spiral.
- Cut the roll with a serrated knife into bite-sized circles.
And there you have it, easy and delicious hummus pinwheel sandwiches that are perfect for a quick and healthy lunch!
Everything Bagel Cucumber and Tomato Pinwheel sandwiches
I just couldn’t leave out an everything bagel pinwheel! It’s my personal favorite and such a fun twist on the classic cucumber sandwich.
ingredients you’ll need
- Tortillas: Again, here, you’ll want to use a burrito-size tortilla to make sure you get a full sandwich roll.
- Cream cheese: I used full-fat cream cheese, but you could also use reduced fat or even a vegan cream cheese.
- Cucumber: Use a mandoline slicer or vegetable peeler to get thin cucumber slices or ribbons.
- Tomato: I like to use a small round tomato because they are easy to slice, but you could also use Roma tomatoes or even beefsteak tomatoes.
- Everything bagel seasoning: You can find this in the spice aisle of most grocery stores.

The combination of smooth cream cheese, crisp cucumber, and juicy tomatoes seasoned with everything bagel seasoning are irresistible!
Pesto Turkey Pinwheel sandwiches
There’s just something about a sandwich with pesto on it that feels so elevated and gourmet. These pinwheels are no exception! The cheese, paired with the turkey and fresh greens, makes for a delicious and flavorful bite.
ingredients you’ll need
- Tortillas: You’ll want to use the large burrito-size tortillas so you can get a good, tight roll on your pinwheels.
- Pesto: I like to make my own pesto, but you can also use store-bought.
- Turkey: You can use deli meat or cook your own turkey breast for this recipe.
- Cheese: I used cheddar, but you could also use Swiss, provolone, or even a dairy-free cheese.

Chicken Salad Pinwheel sandwiches
This chicken salad pinwheel is a fun twist on the classic sandwich. The dill adds a pop of flavor and the celery gives it a nice crunch.
ingredients you’ll need
- Tortillas: You guessed it… Burrito-sized tortillas for the win again!
- Chicken salad: Shredded chicken, Greek yogurt, lemon juice, dill, Dijon, celery, salt, and pepper are all you need for a bright and satisfying chicken salad.
- Lettuce: Butter lettuce is my go-to for these pinwheels, but you could also use remain or even iceberg.

The end result is a perfectly portable chicken salad sandwich roll-up that is perfect for a quick and healthy lunch!
Tips for making tortilla pinwheel sandwiches
- Work on a flat surface. Although it may be tempting to make pinwheels on a plate, the slight raise of the edges will make it harder to roll your tortillas tight. Instead, use a cutting board, countertop, or even a clean sheet pan.
- Chill your pinwheels before slicing. This will help them hold their shape and prevent the fillings from spilling out.
- Use a sharp knife. A serrated knife works best for slicing through these tortilla sandwiches. Wipe your knife between slices. This will help to keep the pinwheels looking neat and tidy.
- Use colorful toothpicks to keep them together and for serving. I like to use wooden toothpicks because they are easy to grab and don’t leave a big hole in the sandwich. However, you could also use plastic party picks.
what to serve/pair with easy pinwheel sandwiches
- Corn Ribs
- Red Cabbage Slaw
- Strawberry Caprese Salad
- Baked Zucchini Fries (Vegan)
- Creamy Cucumber Salad
- Tropical Fruit Salad
how to store pinwheel sandwiches
These tortilla pinwheel sandwiches are best served the day they are made. However, you can store them in an airtight container in the fridge.
how long will pinwheels last in the fridge?
This is going to depend greatly on what you used inside your pinwheel. For example, the hummus and veggie pinwheel will last up to four days, whereas the chicken salad may only last two or three. The tortillas will get soggy the longer they sit.
Frequently asked questions
The best way to keep your pinwheels from getting soggy is to make them fresh. You can store most types of pinwheels in an airtight container just make sure to eat them within a day or two. Or, if you are using a particularly wet dressing or sauce, be sure to put it on the side so that it doesn’t make the tortillas too wet.
I don’t recommend using small tortillas as they will be more difficult to roll and may tear. Corn tortillas tend to fall apart and really aren’t great for pinwheels. However, if you are gluten-free, you could use a gluten-free tortilla.
If you are cutting out the carbs, you could make lettuce cups or sandwiches using large lettuce leaves. I would not recommend trying to roll the lettuce up and cutting into it, the filling will most likely just fall out.
