A pizzadilla is essentially a quesadilla that has been filled with pizza ingredients, such as marinara sauce, cheese, and toppings. While the orgins of this tortilla stuffed pizza may seem like the comes from below the border it’s actually a play on an Italian flatbread sandwich called a ‘piadina’.

Ingredients to make a veggie pizzadilla

  • Flour tortilla: Buritto size tortillas work best for this recipe. They are large enough to fit all the toppings but not so large that they are difficult to eat.
  • Marinara sauce: You can use your favorite jarred marinara or make a quick homemade sauce.
  • Cheese: I like to use mozzarella, but you can really use any type of cheese that you like.
  • Veggies: I like to use chopped bell peppers, onions, and black olives. You can really use any type of veggies that you like or have on hand.

How to make a pizzadilla

If you’ve ever made a quesadilla the process is almost identical, the only difference is what you put inside.

Fill Tortilla

  1. Spread pizza sauce over half of each tortilla.
  2. Sprinkle mozzarella cheese over the sauce.
  3. Top with the green peppers, red onions and black olives.
  4. Sprinkle the remaining cheese over the toppings.

Grill Quesadilla

  1. Carefully place the pizzadilla in a preheated skillet cook until brown and crispy on the bottom.
  2. Carefully flip the pizzadilla over and cook until brown and crispy on the other side.

Tips for making veggie pizzadillas

  1. Keep the toppings thinly sliced and to a minimum. Because you’ll be folding the tortilla in half and transferring it from a plate to a skillet and then flipping it, it’s much easier to handle if the toppings are not bulging out.
  2. Shred mozzarella cheese from a block. Store-bought shredded mozzarella cheese has anti-caking agents to prevent them from sticking together in the bag. I find that this also inhibits how melty the final cheese looks for that ultimate cheese pull!
  3. Don’t forget the double layer of cheese. You’ll want to add cheese first, then any toppings you want, and then another layer of cheese on top. That helps the pizzadilla adhere well together so it’s not falling apart.
  4. Use the oven in a pinch. If you don’t have a grill or griddle you can bake your pizzadilla in the oven. Just place it on a baking sheet lined with parchment paper and bake at 350F for about 15 minutes, or until cheese is melted and bubbly.

  • Use flatbread, pita or even naan. If you don’t have tortillas on hand any type of flatbread will work. If the flatbread you’re working with is not large enough to fold over you can just leave it open-faced.
  • Try a different cheese. If you’re not a fan of mozzarella, try using cheddar, provolone or even goat cheese.
  • Make it meaty. Add cooked ground beef, beef or turkey pepperoni, or shredded chicken.
  • Make it a breakfast pizzadilla. Add scrambled eggs, turkey bacon or sausage and serve with hot sauce.
  • Add some spice. Sprinkle on some red pepper flakes, Italian seasoning or your favorite spice blend.

Ingredients
  

  • 4 8 or 10-inch flour tortillas
  • 2 cups shredded mozzarella
  • ½ green pepper thinly sliced
  • ½ red onion thinly sliced
  • 2.25 oz can sliced black olives drained
  • 4 tablespoons pizza sauce plus more for serving

Instructions

  • Spread about 1 tablespoon of pizza sauce over half of each tortilla. Sprinkle about ¼ cup of mozzarella cheese over the sauce. Top with the green peppers, red onions and black olives. Sprinkle the remaining cheese over the toppings.
  • Fold over the other half of the tortilla over the toppings to form half a circle and press down.
  • Carefully place the pizzadilla in a preheated skillet over medium heat and cook until brown and crispy on the bottom, about 2-3 minutes. Carefully flip the pizzadilla over and cook until brown and crispy on the other side, about 2-3 more minutes.
  • Repeat with the remaining tortillas. Slice each pizzadilla into thirds. Serve with the remaining pizza sauce for dipping.

Notes

Tip: Spray a little cooking oil onto the grill pan for a crispier pizzadilla crust.
