- Tortilla: You’ll want to get the large burrito-size tortillas for this recipe. The smaller tortillas will work in a pinch but don’t roll up as well and will make fewer pinwheels.
- Hummus: I like to use homemade hummus, but you can also use store-bought.
- Carrots: Make carrot ribbons with your vegetable peeler for layering. You can also grate the carrots if you find that easier.
- Zucchini: A mandoline slicer comes in handy for thinly slicing the zucchini, but you can also use a sharp knife or vegetable peeler. I don’t recommend grating the zucchini since it has such a high moisture content.
- Red pepper: The pop of sweetness you get from the red bell pepper is a nice contrast to the other flavors in this pinwheel.

- Cream cheese: I used full-fat cream cheese, but you could also use reduced fat or even a vegan cream cheese.
- Cucumber: Use a mandoline slicer or vegetable peeler to get thin cucumber slices or ribbons.
- Tomato: I like to use a small round tomato because they are easy to slice, but you could also use Roma tomatoes or even beefsteak tomatoes.
- Everything bagel seasoning: You can find this in the spice aisle of most grocery stores.

- Cut the roll with a serrated knife into bite-sized circles.

Tips for making tortilla pinwheel sandwiches
- Work on a flat surface. Although it may be tempting to make pinwheels on a plate, the slight raise of the edges will make it harder to roll your tortillas tight. Instead, use a cutting board, countertop, or even a clean sheet pan.
- Chill your pinwheels before slicing. This will help them hold their shape and prevent the fillings from spilling out.
- Use a sharp knife. A serrated knife works best for slicing through these tortilla sandwiches. Wipe your knife between slices. This will help to keep the pinwheels looking neat and tidy.
- Use colorful toothpicks to keep them together and for serving. I like to use wooden toothpicks because they are easy to grab and don’t leave a big hole in the sandwich. However, you could also use plastic party picks.

how long will pinwheels last in the fridge?
This is going to depend greatly on what you used inside your pinwheel. For example, the hummus and veggie pinwheel will last up to four days, whereas the chicken salad may only last two or three. The tortillas will get soggy the longer they sit.
Frequently asked questions
The best way to keep your pinwheels from getting soggy is to make them fresh. You can store most types of pinwheels in an airtight container just make sure to eat them within a day or two. Or, if you are using a particularly wet dressing or sauce, be sure to put it on the side so that it doesn’t make the tortillas too wet.
I don’t recommend using small tortillas as they will be more difficult to roll and may tear. Corn tortillas tend to fall apart and really aren’t great for pinwheels. However, if you are gluten-free, you could use a gluten-free tortilla.
If you are cutting out the carbs, you could make lettuce cups or sandwiches using large lettuce leaves. I would not recommend trying to roll the lettuce up and cutting into it, the filling will most likely just fall out.

- 2 tablespoons cream cheese at room temperature
- 2 teaspoons everything seasoning
- 2 small Persian cucumbers shaved into ribbons
- 1 small tomato thinly sliced (you’ll want about 6 slices)
Pesto Turkey
- 2 large burrito-sized tortilla
- 2 tablespoons prepared pesto
- 6 slices deli style turkey breast thinly sliced
- 6 slices cheddar cheese thinly sliced
- 1 cup baby spinach loosely packed
Chicken Salad
- 2 large burrito-sized tortilla
- 8 butter lettuce leaves
- 1 cup shredded chicken
- ¼ cup Greek yogurt
- ½ lemon juiced
- 1 tablespoon dill chopped
- 2 teaspoons Dijon mustard
- 1 celery stalk diced
- Salt and pepper to taste
Instructions
- For the first three pinwheels: Place the tortillas on a large cutting board. Add the spreadable ingredient (hummus, cream cheese or pesto to each tortilla, spreading into an even layer all over the surface of the tortilla.
- Divide any of the remaining ingredients evenly between each tortilla, layering them in the center of the tortilla.
- For the chicken salad pinwheel: Place the tortillas on a large cutting board. Add four leaves of butter lettuce to each tortilla. In a medium bowl, combine chicken, Greek yogurt, lemon juice, dill, Dijon, celery, salt and pepper. Stir until all of the chicken is evenly coated with the yogurt mixture. Add half of the prepared chicken salad on top of each, spreading it into an even layer.
- To roll the pinwheels: Take the bottom portion of the tortilla, and fold it about ⅔ of the way up and over the vegetables. Using your fingers, pull back on the folded over portion of the tortilla to create the start of a tight spiral.

For me, these are perfect for the times you need lunch for a crowd but dont want to waste time assembling several sandwiches. I seasoned my cream cheese with some onion seasoning and dill for a ranch flavor before spreading and got some inspo from both the everything bagel and pesto turkey for a nice combo.
