Make hummus crusted chicken for dinner!

Leftover hummus has a new use… Hummus Crusted Chicken! Ok, I know there’s probably no such thing as leftover hummus because there are so many ways to spread it, dip it and top it. But if you happen to have some leftover or want to try baking chicken with something new, you have to try it with hummus! It gives it a nice crust on the outside and keeps the chicken juicy.

Hummus Crusted Chicken Ingredients

The ingredients to make the recipe
  • Hummus: I recommend my recipe for hummus, but you can also use store-bought hummus.
  • Chicken: Use boneless, skinless chicken breasts for this recipe. Make sure the pieces are similar in thickness so they bake evenly.
  • Spices: Ground cumin, paprika, salt, and pepper give the chicken its Mediterranean flavor.

How to Make Hummus Crusted Chicken

Step 1: Season the chicken breasts with salt and pepper. Mix the spices with the hummus and rub it all over the chicken.
Step 2: Bake the chicken until it’s cooked through and serve.

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Pat chicken breasts dry and season with salt and pepper. In a medium bowl, combine the hummus and spices. Rub the mixture evenly all over the chicken breasts on both sides.
  • Place the hummus covered chicken on the prepared sheet pan and bake for 15–20 minutes or until a meat thermometer reads 160° F internal temperature. Then broil it for 1–2 minutes, watching so it doesn't burn.
  • Sprinkle with fresh parsley and serve with a side of couscous and veggies, if desired.

      The flavor on this chicken was delicious! I followed the recipe but the bottom of mine did not crisp at all it was still just like hummus. How did you get it to crisp all the way around? Did you flip half way? Either way I’ll be making this again !

        That does happen on the bottom of the chicken actually. But just make sure to broil it at the end for a couple minutes. You can try flipping it if you’d like too!
