Hummus Crusted Chicken
This hummus crusted chicken is easy to prep and great for a weeknight meal. It gets perfectly juicy every single time!

Servings: 4 servings
Preheat oven to 400°F and line a baking sheet with parchment paper.
Pat chicken breasts dry and season with salt and pepper. In a medium bowl, combine the hummus and spices. Rub the mixture evenly all over the chicken breasts on both sides.
Place the hummus covered chicken on the prepared sheet pan and bake for 15–20 minutes or until a meat thermometer reads 160° F internal temperature. Then broil it for 1–2 minutes, watching so it doesn't burn.
Sprinkle with fresh parsley and serve with a side of couscous and veggies, if desired.
Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
