I love coconut water!

I really enjoy coconut water, especially when I’m feeling dehydrated or just run down. And if I’m hungry too? This coconut water smoothie is what I make. It’s cold, hydrating, and has just enough going on to actually fill me up.

I usually keep a few frozen bananas in the freezer for smoothies like this, and the rest is pantry stuff: dates, cinnamon, maybe some kale if I have it. It’s not overly sweet, and I love that I can sip it slowly without feeling like I’m drinking dessert.

Coconut Water Smoothie Ingredients

Ingredients for recipe: coconut water, almond milk, kale, banana, dates, shredded coconut, and cinnamon.
  • Unsweetened almond milk: Swap for your favorite dairy-free milk of choice. I also like using coconut milk.
  • Coconut water: Use unsweetened coconut water.
  • Frozen banana: I highly recommend using frozen banana; it adds a creaminess and makes it extra cold without watering it down with ice.
  • Kale: Use chopped kale or baby kale. If using regular kale, remove the stem before blending, it can be bitter. You can also use baby spinach if you prefer.
  • Unsweetened coconut: If you only have sweetened coconut, you can use it, but I might cut down on the dates so it’s not too sweet.
  • Pitted dates: If you do not have any, use 1 tablespoon of maple syrup or honey.
  • Cinnamon: Just a little goes a long way.

Step 2: Blend until you get a smooth and creamy texture.

Ingredients
  

  • 1 ½ cups unsweetened almond milk
  • 1 cup coconut water
  • 1 frozen banana
  • 1 cup chopped kale
  • ¼ cup unsweetened shredded coconut
  • 4 dates pitted
  • 1 teaspoon cinnamon

Instructions

  • Place all the ingredients in a high-speed blender, and blend for 1-2 until you get a smooth and creamy texture.
  • Taste the smoothie, adding more milk if it is too thick or adding more sweetener if it’s not sweet enough. Pour into a cup or mason jar. Enjoy immediately, or store in the fridge for up to 24 hours.

Notes

Storage:
Smoothies are best enjoyed fresh but if you have any leftover coconut water smoothie, store it in an airtight container like a mason jar in the fridge for up to 2 days. If needed, blend again before drinking.
To freeze, transfer the smoothie to a freezer-safe container, leaving plenty of space to allow for expansion during freezing. Seal the container and place it in the freezer for up to 3 months. When ready to enjoy, thaw in the fridge and shake or blend to incorporate any separated ingredients.
