- Tortillas: I like 10-inch flour tortillas, about the size of a personal pizza.
- Sauce: Use your favorite store-bought or homemade pizza sauce. You can even use marinara sauce if you prefer!
- Mozzarella cheese: Whole-milk mozzarella or part-skim mozzarella are both great options, depending on your preference, but shred your own cheese for the best melt. Pre-shredded cheese can have anti-caking agents that can affect melting and texture.
- Oregano: A light sprinkle of dried oregano adds that unmistakable “this is a pizza!” taste.
- Crushed red pepper flakes: For a touch of heat. They can be left off for a more kid-friendly pizza, or add a few more if you like your pizza spicy!
- Toppings: Use whichever toppings you like! I love a mixture of olives and mushrooms, but you can add other toppings or veggies, such as green bell peppers, onions, and so much more.

- Single layer or double layer options: My original tortilla pizza recipe called for a single tortilla, but I’ve since tweaked it to use a double layer of tortillas because I like the outcome better. Either one will work, so feel free to choose your favorite! A single layer makes a more crispy tortilla pizza while a double layer is more similar to traditional thin crust pizza.
- Change tortilla types: You can use a gluten-free variety like cassava tortillas, whole wheat, or a keto-friendly tortilla, but large works best.
- Mix up the cheese: Perfectly melty low-moisture mozzarella is a standard on pizza for a reason, but adding to or replacing the mozzarella can make for fun variations. Try slices of fresh mozzarella, Parmesan, a light sprinkle of cheddar, gorgonzola, feta, goat cheese, or some creamy dollops of ricotta.
- Omit or switch up the spices: Oregano and crushed red pepper flakes boost the flavor of these tortilla pizzas, but if you don’t have them on hand, your tortilla pizzas will still be delicious. A sprinkle of fresh basil or a few bits of rosemary are tasty additions, too.
How to make tortilla pizza
I’ve tweaked my originally published Tortilla Pizza to make it a double-stacked tortilla pizza because it really transforms the texture and taste, and, I think, better mimics an actual thin-crust pizza. However, this version is less crispy all around as compared to the one-tortilla pizza.
- Place your first tortilla on a layer of parchment paper.
- Spread pizza sauce on the tortilla.
- Sprinkle with cheese.
- Top with another tortilla and spread more sauce over the top.
- Add cheese and desired toppings.
- Transfer the pizza to your baking sheet and bake tortilla pizza in the oven until the cheese is bubbly, the toppings are tender, and the edges are golden and crispy.

Tips for making the best tortilla pizza recipe
- Use the toaster oven instead of your oven. You can place the tortilla on the rack of your toaster oven for a faster, crispy-edged pizza. You can use the same temperature of 425°F, but the time will be 2-3 minutes shorter.
- Cut and slice raw toppings into similar-sized pieces. This will allow them to cook evenly. If you’re using pre-cooked items like caramelized onions or shredded chicken, you don’t have to worry about the sizes.
- Get an extra crispy tortilla crust by cooking the pizzas in a skillet. Heat a little oil in the skillet, once hot, wipe the excess oil out with kitchen paper and place in a tortilla. Add the toppings and then cook in a pre-heated oven as directed.

How to store & reheat tortilla pizza
To store leftover tortilla pizza, allow it to cool to room temperature, then place it in an airtight container. To reheat, place in an oven or toaster oven at 350°F for about five minutes.
How long will tortilla pizza last in the fridge?
Tortilla pizza leftovers will keep in the refrigerator for four to five days.
Can I freeze crispy tortilla pizza?
Yes! To freeze a cooked tortilla pizza, first allow the pizza to cool to room temperature, then transfer to a freezer bag or an airtight container. Place in the freezer for up to three months. To reheat, place in a 425°F oven for about five minutes until warmed through.
You can also freeze uncooked tortilla pizzas! Assemble the pizzas and stack with parchment paper in between. Transfer to a freezer bag or airtight container or wrap tightly and freeze for up to three months.
To cook, place frozen pizza on a baking pan or pizza stone and bake in a 425°F oven for eight to 10 minutes, until the cheese is bubbly and the edges are crispy.

Yes, you can use pita bread, naan bread, or another store-bought flatbread like lavash. Watch your pizza closely while it’s baking as they may take more or less time than tortilla pizzas depending on size.

- 2 10-inch flour tortillas
- ½ cup pizza sauce divided
- ½ cup shredded mozzarella cheese divided
- ½ teaspoon oregano divided
- ¼ cup olives sliced
- ¼ cup mushrooms sliced
- ¼ teaspoon crushed red pepper
Instructions
- Preheat the oven to 425°F. Place a baking sheet or pizza stone, if you have one, in the oven while it’s preheating.
- Place one tortilla on a piece of parchment paper. Spread ¼ cup of the pizza sauce evenly over the tortilla. Sprinkle ¼ cup of the mozzarella cheese over the pizza sauce. Season with ¼ teaspoon of the oregano.
- Place the second tortilla on top and repeat with the remaining pizza sauce, leaving a small border around the edge for the crust, then add the remaining cheese and the remaining oregano.
- Add the sliced olives, sliced mushrooms and red pepper flakes, or your desired pizza toppings, on top of the cheese.
- Carefully transfer the assembled tortilla pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 5-7 minutes or until the tortilla edge is crisp, and the cheese is melted and bubbly. Use a pizza cutter to slice the pizza into 4 or 6 slices and enjoy immediately.
