Make corn ribs in the air fryer!

I started making corn ribs after seeing them everywhere online, and now they’re one of my favorite summer sides. They curl up in the air fryer, get a little charred on the edges, and are easy to eat with your hands. I mix the butter with cilantro so it melts right into the kernels, but you can swap in parsley or leave the herbs out if you want something simpler.

Corn Ribs Ingredients

- Corn: Look for corn cobs with bright green husks that are tightly packed against the cob. The shorter and wider the corn is, the easier it will be to cut. I’ll show you how to cut corn ribs below.
- Butter: Using high-quality butter makes all the difference. I recommend Danish Creamery European Style Sea Salt Butter, made from high-quality cream from pasture-raised cows. It’s 85% butterfat, which means it adds a richness and a truly buttery flavor that doesn’t compare to using oil.
- Cilantro: I recommend cilantro, parsley, or dill.

Corn Rib Recipe
Ingredients
- 3 corn on the cob husks removed
- ½ cup Danish Creamery salted butter room temperature
- 3-4 tablespoons chopped cilantro plus more for serving
- Sea salt for serving
Instructions
- Stand the corn vertically on a cutting board. Place the knife firmly at the top of the corn, right in the middle, and push down carefully, sawing back and forth without pushing too hard.
- Hold the two halves together and cut them in half again vertically to create quarters.
- In a small bowl, combine the butter and cilantro. Spread the butter mixture generously all over the corn.
- Place the corn ribs in an air fryer basket in a single layer, leaving space between each one.
- Air fry at 400ºF until the corn ribs start to curl and become charred, 10–15 minutes.
- Serve with a sprinkle of sea salt and fresh cilantro, if desired.

Recipe Tips
- Use a very sharp knife. Cutting corn vertically is challenging, so I recommend using a chef’s knife. But don’t push too hard: It’s about patience, not strength!
- Cut the cobs in half, widthwise, first. Shorter pieces are easier to cut into ribs. The corn ribs won’t be as long, but they’ll be easier to manage.
- Don’t substitute oil for butter. The oil will likely fall to the bottom of the air fryer basket before the corn cooks. I recommend using Danish Creamery softened butter because it will stick to the corn longer for better flavor.
