You really only need cucumbers and water to make cucumber juice, but I like adding lemons and mint for their added nutritional benefits and flavor.

  • Cucumbers: Use the freshest cucumbers you can for juicing, and organic if you can. They should be bright in color with an evenly colored skin, and make sure they are firm. Cucumbers are high in nutrients but low in fat and calories. They contain up to 90% water, so they are great for hydration with added benefits of heart-healthy antioxidants. They can also help lower blood pressure and blood sugar.
  • Lemons: Lemon juice adds a great zing to the cucumber. I recommend using fresh rather than bottled juice for the most benefits. Lemons contain a high amount of vitamin C and can reduce your risk of heart disease and improve your digestive system.
  • Mint: Fresh mint leaves are blended into this cucumber juice and they work so well with the other ingredients. Use fresh leaves that are rich in nutrients. They can help digestion and ease cold symptoms.
  • Use other high-water vegetables: Celery and zucchini both have high water content and similarly bright, crisp flavors, making them perfect options to switch things up. 
  • Use your favorite citrus: The acidity in any citrus works well with the flavor of the cucumber. Try lemon, lime, orange, or even grapefruit juice. 
  • Try other herbs: Basil, cilantro, lemon verbena, dill, and flat-leaf parsley all add a nice kick of flavor and work well with the brightness of the cucumber. 
  • Add fruit for more flavor: Add fruits with high water content, like berries or melon, to create your own cucumber juice variations.

Add a kick of cayenne: Add a small pinch of cayenne pepper to your juice to add a spicy kick that’s balanced by the coolness of the cucumber.

How to Make Cucumber Juice

Place all of the ingredients into a food processor or in a blender, and blend the ingredients until smooth. There is an option al step to strain the juice through a fine sieve and into a pitcher or bowl, but it’s not necessary if you have a strong blender.

Tips for Making the Best Cucumber Juice

  1. Peel and remove all of the skin from the cucumbers. This helps to ensure that there are no tough solids left over after making the cucumber juice. Instead, you’ll have a smooth and consistent juice.
  2. Blend the ingredients for at least two minutes. This is especially important if you don’t have a strong blender. The speed and duration of blending are what help with the perfect consistency.
  3. Use a strainer for extra smooth cucumber juice. If you keep the peel on the cucumber or feel that the mint or lemon zest didn’t blend well, you can pour the juice through a mesh sieve and use a spoon to stir it around so it strains properly, making it without any chunky bits.
  4. Cut the cucumber into small chunks: If you don’t have a high-speed blender, cutting the cucumber into small chunks makes it much easier to create a smooth juice.
  5. Drink the juice as soon as you’ve made it since the ingredients start to lose their nutrients once they are oxidized. If you are making it ahead of time, store it in an airtight container or cover with plastic wrap and keep it in the fridge. Drink it within 24 hours.

For the brightest flavor and maximum health benefits, you should drink your cucumber juice as soon as you make it. However, it can be refrigerated for about a day if necessary.

Cucumber juice will last for a maximum of 24 hours in the refrigerator in an air-tight container. After that, the flavor begins to dull and many of the nutrients are lost.

Cucumber juice freezes well and will last for up to a year in the freezer. The most efficient way to freeze cucumber juice is by pouring it into ice trays, then popping out the cubes and storing them in a heavy-duty freezer bag.

Ingredients
  

  • 6 cups water
  • 2 English cucumbers
  • 1 lemon juice and zest
  • 2 tablespoons fresh mint

Instructions

  • Slice off the ends of the cucumbers and peel. Chop into a few larger pieces.
  • Place the cucumbers, water, lemon zest, lemon juice and mint in a food processor or in a blender. Blend the ingredients for 2-3 minutes until smooth.
  • Set a strainer over a larger bowl and pour the cucumber juice into the strainer. Use a spatula to move the juice through the strainer until no more juice strains out. Discard the solids.
  • Enjoy the cucumber juice immediately, or store in fridge for up to 24 hours.

Notes

Storage: Store any leftovers in an airtight mason jar. It will stay fresh for up to 24 hours. But ideally, it’s best to consume immediately after blending.
Equipment: I use my Vitamix blender to make my smoothies. It has a “smoothie” button so it does all the work for me until the ingredients are well blended.

    Absolutely love the recipe, I used slicing cucumbers from our garden, pureed water and cucumbers and sieved all the pulp off. Added 1 lemon juiced, 1 tsp pink salt, 1 tbsp honey. OMG it was better than my normal Gatorade cucumber and lime. Leftover pulp I’m freeze drying for later uses in Tzatziki and more juice in a concentrate. Thank you sooo much.

    I made it this morning but sadly, through no one’s fault, except Mother Nature it did not turn out well. We are in a drought situation and the cucumbers were dry and very woody. The English cucumbers are imported and I do not pay $5.00 US for one. Anyhow I might add vodka to the juice I made but when I get English cukes at a decent price I will try this recipe again.😁😁😁 FIVE stars again for ease of making and for just a few ingredients.

    It looks delicious but how do you get the vibrant green colour?
    I am giving this 5 stars even though I have not tried it. My rating is based on minimal ingredients and ease of making. I can’t get English cukes in my neck of the woods but am sure it will still be refreshing.

      Choosing a fresh, brightly colored cucumber helps give that vibrant green color. The lemon also helps prevent browning. I think other varieties of cucumbers would taste great, let me know how it turns out for you!
