Make watermelon feta salad!

Watermelon and feta are such a great combination especially in this watermelon feta salad with cucumbers, mint and a honey lime dressing. We go through so much watermelon during the summer and it’s just so refreshing on its own.

But when I’m looking for an additional colorful dish to add to any cookout and potluck menu, this watermelon feta salad is one I make all the time. The sweet and salty combo is one that everyone loves, and it’s so easy to throw together! Watermelon Feta Salad Ingredients

Ingredients to make the recipe
  • Watermelon: Use a ripe watermelon and cut it into cubes. You can buy pre-cut watermelon, but it won’t be as juicy. Here’s a quick tutorial on how to cut a watermelon.
  • Feta: Use crumbled feta cheese to make it easier and cut them into smaller pieces if the chunks are too big. Goat cheese also works well.
  • Cucumber: I use smaller Persian cucumbers, but diced English cucumbers also work.
  • Red onion: It’s milder than white or yellow onion, and you can eat it raw in salads. Slice it finely so it’s not too overpowering. You could also use sliced green onions. To mellow it out even more, add it to the dressing while you chop the ingredients.
  • Mint: It goes so well with feta, but basil, parsley, or cilantro also work.
  • Dressing: A mixture of olive oil, lime juice, honey, salt, and pepper.

How to Make Watermelon Feta Salad

Step 1: Add the watermelon to a large bowl.

  • ½ small red onion thinly sliced
  • 4 ounces crumbled feta cheese
  • 2 tablespoons fresh mint chopped, plus more for garnish

Recipe Variations

  • Add a crunch. Toasted pine nuts or pistachios add flavor and texture and keep the mediterranean vibe. Try about ¼ cup of either one.
  • Start with a whipped feta base. My cucumber bites recipe has instructions for making whipped feta. Spoon it underneath the watermelon feta cheese salad or serve it on the side for dipping!
  • Try a different melon. Watermelon is my go-to for this recipe, but honeydew, Galia, and cantaloupe are also great choices.

Recipe Tips

  1. Cut the watermelon into evenly sized cubes. They mix more easily with the other ingredients this way and have a better presentation.
  2. Toss the salad gently when you add the dressing. Be careful not to smash the watermelon!
  3. Chill the salad before serving. After tossing, chill the salad in the fridge for at least 30 minutes. This allows the flavors to develop and makes the watermelon nice and refreshing.

How do I store watermelon feta mint salad?

Store in an airtight container in the fridge. It will keep well for up to 4 days, but tastes best within 2 days. After 2 days, the watermelon and cucumber will start to lose their crunch, but will still be good to eat.

Can I freeze watermelon cucumber salad?

I don’t recommend it. The watermelon and cucumbers become mushy and lose their crisp texture when they thaw, and the dressing for the watermelon salad will likely separate.
