After mixing the cashews with sweet-salty flavorings, the nuts are baked until they’re browned and caramelized! I always find myself eating handful after handful of them.

With only six ingredients, these honey roasted cashews take just 20 minutes to make. I like having them on hand for snacks, a pre-dinner nibble, or even to go with a holiday cheeseboard! The nuts have a sweet-salty flavor and notes of cinnamon and vanilla. Plus, the honey gets caramelized in the oven, adding a crackling sugar crust to each and every cashew.

- Light brown sugar: This adds a molasses-y flavor. You could use dark brown sugar instead!
- Vanilla extract and cinnamon: These are my flavorings of choice! They go with the honey well.
- Cashews: Make sure to use raw (not toasted) cashews, since they’ll toast in the oven.

- Use a different nut. Almonds, pecans, or walnuts would work instead.
- Add in spices. Instead of (or in addition to!) the cinnamon, add in grated nutmeg, cardamom, or even pumpkin spice!
- Use a different sweetener. Maple syrup or brown rice syrup would work well in place of the honey! Using one of these would also make this recipe vegan.
- Make it into a trail mix. You could mix these honey roasted cashews with dried fruit, chocolate chips, and other nuts to make trail mix!

These honey roasted cashews require just a little time in the oven to become roasty, toasty, and caramelized!
Tips for Making the Best Honey Roasted Cashews
- Make sure the cashews are fully coated in the honey mixture. That way they will brown and caramelize all over, and every bite will be delicious!
- Place the cashews in a single layer on your baking sheet. If they are piled on top of each other, they won’t roast evenly.
- Don’t be tempted to break up the clusters too soon. Allow the cashews to cool completely before trying to break up the clusters. This way, they’ll be extra crispy!
- Let them cool before storing. Once you take the cashews out of the oven, let them sit, undisturbed for at least 30 minutes. This will allow the honey to solidify.
- Add more seasonings. These honey roasted cashews are delicious as they are, but feel free to add a little cayenne to make them sweet and spicy, or more salt for a savory edge.

Ingredients
- 1 tablespoon unsalted butter
- 2 tablespoons honey
- 1 tablespoon packed light brown sugar
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt plus more for serving
- 2 cups raw cashews
Instructions
- Preheat the oven to 350°F. Line a small baking sheet with parchment paper.
- In a medium bowl, melt the butter in 2 30-second increments. Add the honey, brown sugar, vanilla, cinnamon, and salt, and stir together until well combined.
- Add the cashews on top of the honey mixture and stir until all the cashews are evenly coated.
- Spread the cashews in a single layer on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure even roasting. The cashews should be golden brown and fragrant.
