Nothing quite says summer like homemade beef hamburgers! This simple burger recipe combines ground beef with a mix of flavorful seasonings to create juicy, delicious patties that can be cooked on an outdoor grill or indoor grill pan. Serve them up with your favorite toppings and condiments and a side of grilled sweet potato wedges!

Ingredients to Make Homemade Burger Patties

Ingredients for recipe before prepping: Worcestershire sauce, spices, breadcrumbs, an egg, and lean ground beef.
  • Ground Beef: I prefer using 85% lean ground beef for making burger patties. It has just enough fat to keep the burgers juicy without making them overly greasy.
  • Large Egg: This helps bind the patties together, so they hold their shape while cooking.
  • Worcestershire Sauce: Adds a deep, savory flavor to the burgers. Just a couple of tablespoons make a big difference.
  • Seasonings: A mix of paprika, onion powder, garlic powder, salt, and black pepper. These seasonings add a balance of smoky, sweet, and savory flavors to the patties.
  • Fine Breadcrumbs: These help absorb the juices and keep the patties tender and moist. Make sure they’re finely ground for the best texture.
  • Ground Turkey or Chicken: For a leaner option, you can use ground turkey, or chicken instead of beef. Keep in mind that turkey and chicken is lower in fat, so you might want to add a tablespoon of olive oil to keep the patties moist. Or you can follow my ground chicken burger or turkey burger recipe.
  • Cheese Stuffed: For a delicious twist, try stuffing the patties with cheese. Simply place a small cube of your favorite cheese in the center of each patty before fully forming and cooking. It’s similar to making cheese stuffed meatballs, just on a larger scale.
  • Spicy Kick: If you like a bit of heat, add a teaspoon of cayenne pepper or some chopped jalapeños to the seasoning mix.
  • Toppings: Customize your burgers with a variety of toppings like lettuce, tomato, onion, pickles, avocado, or sautéed mushrooms.

How to Make Homemade Burgers On The Grill

Hamburger patties are easy to make with just a little seasoning and shaping you’ll have burgers ready to throw on the grill in no time.

Mix and Prepare Burgers for Grilling

  1. In a large bowl add theWorcestershire sauce, paprika, onion powder, garlic powder, salt and pepper.
  2. Whisk well to combine.
  3. Add the ground beef and breadcrumbs, and use your hands to mix until combined.
  4. Portion the hamburger out into 4 equal measurements.
  5. Gently shape the mixture into 4 patties, about ¾ inch in thickness.
  6. Use your thumb to press down in the center of each patty to create an indent. Refrigerate the patties for 20-30 minutes to help keep their shape.

Grill the burgers

  1. Preheat the grill or grill pan to medium heat and oil the grates or pan.
  2. Cook the burgers for a few minutes per side until they reach the desired doneness.

Tips for Making the Best Grilled Burgers

  1. Make an indent in the center of each patty. This will help the burgers to cook evenly and will prevent shrinkage.
  2. Use your hands to mix the the patties. It’s a little messier but the ingredients will combine much easier this way. You can wear tight fitting plastic gloves to keep your hands clean if you like.
  3. Don’t overmix the burger mixture. Everything should be just combined. If you overmix, the burgers can become tough and chewy. Mixing them with your hands will help you avoid overmixing.
  4. Refrigerate the burger patties immediately after forming them. This helps with two things. First, it helps keep the patty formation. Second, it helps to limit moisture on the burger, which means it will cook faster, which is over-cooking.
  5. Once on the grill, don’t flatten the burger with a spatula. When you do this the meat will lose some of its juices. Just flip them, don’t be tempted to press them down.

Can you cook these burgers in the oven?

I always prefer to grill burgers so that you get those nice crispy edges. You can cook them in the oven though if you like. Cook the burgers on a baking sheet in a preheated oven at 425F for about 15 minutes until they are cooked through.

Can I Freeze raw burger patties?

Yes, you can freeze the uncooked burger patties and they will keep well for up to 3 months. Freeze the patties on a baking sheet and once solid, transfer to a freezer bag or container. Thaw the frozen burgers in the fridge overnight before cooking.

Can you make these ahead of time?

You can mix the burger ingredients a day ahead of time and keep the covered in the bowl, you can also form the patties and keep those covered so they are ready to take out and cook. The uncooked burger mix will keep for 1 to 2 days.

  • 1 large egg

Storage: Store any leftovers in an airtight container. They will last about 3 days in the fridge.
Freezing Instructions: Freeze uncooked patties on a baking sheet, then place them all together in a ziplock bag. Thaw in the fridge overnight before cooking
Substitutes: For best results, follow the recipe as is. However here are some common substitutes that would work well in this recipe.
  • Instead of breadcrumbs, you can use all-purpose flour. 
  • To make it gluten-free, you can use quick oats, almond flour or panko breadcrumbs.
Please note the video includes Dijon mustard, but this updated recipe now includes Worcestershire sauce for a slightly more savory flavor. Dijon mustard still works really well for this recipe.

    If you are on dialysis and you have the same problem I do (that metallic taste from ground beef) then this is the right recipe. It takes it away and is great tasting. So soft and moist and it keeps the patties together
