Ingredients & substitutions

  • Yogurt: Use a full fat yogurt for the best texture and flavor. Vanilla yogurt is a great base to use, but you can use any flavor you like.
  • Fruit: Fresh strawberries and blueberries add a great pop of color and it’s a tasty way to get some fruit into your family’s diet. You can make this bark with other fresh fruits like mango, raspberries or kiwi fruit.
  • Granola: Try this homemade granola recipe, make your own or use any store-bought ones you like. You can also skip the granola and add something else crunchy like nuts, seeds, or even chocolate chips!

How to make yogurt bark

  1. Spread the yogurt evenly over a lined baking sheet.
  2. Top with chopped strawberries.
  3. Top with blueberries or any other fruits.
  4. Finish with granola and freeze until firm.

Tips for making frozen bark

  1. Use full fat yogurt. Using yogurt with full fat means that the texture will less likely get icy when frozen. It will also have a better taste that’s more creamy.
  2. Chop everything small. Small fruits like blueberries work very well here and chopping larger fruits to be about the size of blueberries helps with cutting the bark. Make sure the fruits are not too bulky either so the bark looks flat.
  3. Line your baking sheet. This will help to remove the bark easily from the tray, if you don’t line it, the yogurt will freeze to it and it will be really tough to remove. Use parchment or wax paper to line the entire surface of your sheet pan.
  4. Allow time for the bark to set. It will take around 3 hours for the bark to fully set in the freezer. Make it the night before to enjoy the next day.

Can you use frozen fruits?

  • 2 cups whole milk vanilla yogurt
  • ½ cup diced strawberries
  • ¼ cup blueberries
  • ¼ cup granola

Instructions

  • Line a rimmed baking quarter sheet with wax or parchment paper.
  • Pour the yogurt into the baking dish and spread evenly on the prepared baking sheet so that it fills the shape.
  • Top with the strawberries, blueberries and granola.
  • Place in the freezer until the yogurt is firm, about 3 hours.
  • Cut into 12-15 pieces, and enjoy cold.
  • Store leftovers in the freezer.

  1. This was good, but maybe I cut my strawberries a little thick? My kids were complain that they couldn’t bite through the berries. Does everyone else slice the fruit super thin?

    1. You can also let it temper a little a room temperature for a bit before enjoying to soften the fruit a bit, or dice them into smaller pieces. Hope this helps.

    1. I recommend whole milk, low fat has more water content and can turn icy. That being said you can try it!

  2. Hi, just made this but can I leave it to freeze overnight before cutting it into pieces for my child’s break at school? I’m trying to get her to eat healthier options at break time. Also does it need covered before putting into the freezer? X

    1. Hi Joyce, I don’t recommend sending this to school. It will most likely melt and turn back into yogurt before she gets to eat it. You don’t want to cover it with anything to avoid whatever you use, plastic wrap, etc. getting stuck/frozen in the bark.

  3. My recipe for this got very “icy.” I used Stonyfield Organic Vanilla Whole Milk yogurt. If this is the wrong thing to use, please give me an example of what I should be using.

    1. Hmm, did it get icy after staying in the freezer for a day or so or right away? Sounds like it might have thawed and then refroze, is that a possibility?

      1. I checked it after 5 hours and it was icy. I never opened the freezer before that. Is there a different yogurt I should be using?

        1. Hmm, I use Stonyfield. I am not sure why it got icy. Greek yogurt does have less moisture than traditional so try that. You can also try a different brand and see if that does make a difference. Sorry, I am not much help!

          1. I made this recipe but I didn’t have a lot options for fruit so I used what I had. Strawberries, Green Apples and Cherries were the perfect sweet and tart combination to pair with creamy yogurt and crunchy granola. Since I added apples, I figured that the yogurt mixture needed a dash of cinnamon. This was a nice snack to say goodbye to summer but also welcome fall. Can’t wait to try again with other fruits and with your new line of granola coming soon.

  15. For this recipe I used some of my favorite banana flavored granola with strawberries, blueberries, and nuts (for texture). Our freezer isn’t that big so i made half. It was kinda like a frozen deconstructed parfait 😂 but it tasted just as good as when I make parfaits regularly. It’s definitely more appropriate for the hot weather tho, so I was thinking next time I’ll use an ice pop mold instead with some of the fruit blended and then topped with the granola as a nice parfait pop. Perfect for summer!

  19. I looooooved the yoghurt bark! It was my first try making and tasting one. I was out of strawberries so I opted for blueberries, banana and granola instead. And drizzled honey on the top! *chefs kiss*

  21. I love this idea but I tried this with whole milk plain yogurt because that’s what I had on hand, and it turned out with lots of ice crystals. Not sure if it was the type of yoghurt I used?

    1. The yogurt should be fine. Ice crystals usually form from other things such as if the doors of the freezer are opened frequently – that might be the reason!

  22. I found this recipe to be not practical. The yogurt melts in your hand, can get too cold to hold, and just gets too messy. Also, I am curious about how you actually store the leftovers.

    1. It’s important to enjoy cold/ right out of the freezer, as it will naturally melt if left outside for too long. As for the leftovers, store it in a bag or airtight container with the pieces separated with parchment. It will keep well for up to 3 months.
