ROASTED BUTTERNUT SQUASH SOUP

VEGAN RECIPE

This Roasted Butternut Squash Soup recipe is a healthy vegan soup for the fall, and has around 300 calories a serving!

INGREDIENTS

what you'll need

▢ butternut squash ▢ olive oil ▢ salt ▢ black pepper ▢ cinnamon ▢ ginger ▢1 onion ▢2 garlic ▢ vegetable broth

STEP 1

drizzle

olive oil and seasonings over butternut squash cubes

STEP 2

bake

the butternut squash until tender and golden

STEP 3

cook

the onions, seasonings, and garlic

STEP 4

transfer

the vegetable broth and butternut squash to the pot

STEP 5

blend

the soup until completely smooth

STEP 6

stir

in the coconut milk

Toasted sourdough bread for dunking is totally optional, but highly recommended!
