You guys asked me for a vegetarian version of my Marry Me Chicken, so here it is… Marry Me Chickpeas! Chickpeas have enough texture and bite left in them (compared to other canned beans) to really make the meal feel complete. The Marry Me sauce is always the best part anyway, so using a more textured bean really rounded out this version for me, having now had both. I put these Marry Me Chickpeas over pasta or rice, or just grab some bread and dunk it in the sauce. Soo good.

For the past 10 years, I’ve tested every recipe before sharing it with you! These notes give you a peek into the process of developing this Marry Me Chickpeas recipe.
I actually made this recipe with heavy cream first, and they were great. But heavy cream just isn’t really how I like to cook, so I went back and tried to get that same creamy sauce with a mix of milk and Greek yogurt instead. That took me a few tries. The first time I dumped the milk and yogurt in while the pan was still too hot, and it split on me immediately.
The second time I added it on low heat, and it didn’t split, but it still looked a little off, kind of separated with oily patches. That’s when I started to think it wasn’t the heat at all, it was the sun-dried tomatoes.
So I tried holding the tomatoes back and stirring them in right at the end instead, and that was the fix. The sauce stayed smooth and creamy, and the tomatoes still warmed.

Marry Me Chickpeas Ingredients

- Chickpeas: I recommend low-sodium canned chickpeas, or you can cook your own chickpeas from scratch. Drain and rinse them well before adding them to the skillet, because extra liquid can water down the sauce.
- Sun-dried tomatoes: I use oil-packed julienned sun-dried tomatoes and save the oil from the jar for cooking the chickpeas.
- Seasoning and aromatics: Italian seasoning, paprika, salt, black pepper, minced garlic, and crushed red pepper flakes season the chickpeas and sauce. If you want less heat, you can reduce the red pepper flakes, or just skip them.
- Creamy sauce: Whole milk and plain Greek yogurt make the sauce. If you want to use plant-based milk, I recommend unsweetened, unflavored cashew milk because it’s creamier. Almond milk works too, but I’d avoid coconut milk, since its flavor may overpower the Parmesan and sun-dried tomatoes.
- Parmesan and basil: Freshly grated Parmesan melts more smoothly than pre-shredded cheese. The basil goes on at the end so it stays fresh.

1. Season the chickpeas

Heat the reserved sun-dried tomato oil in a large skillet, then add the chickpeas, Italian seasoning, paprika, salt, and black pepper. Stir occasionally until the chickpeas are warmed through and lightly golden in spots.
2. Add the garlic

Stir in the minced garlic and crushed red pepper flakes. Keep stirring until the garlic smells fragrant, making sure it doesn’t brown too much.
3. Pour in the milk mixture

Whisk the milk and Greek yogurt together separately until well combined. Lower the heat, pour the mixture into the skillet, and scrape up anything stuck to the bottom of the pan.
4. Simmer the sauce

Let everything simmer gently, stirring occasionally, until the sauce starts to thicken. Keep the heat fairly low here so the dairy heats gradually rather than boiling.
5. Add the tomatoes and Parmesan

Turn off the heat, then stir in the sun-dried tomatoes and freshly grated Parmesan. Mix until the cheese melts into the sauce and everything is well combined.
6. Finish the Marry Me Chickpeas

Sprinkle the fresh basil over the chickpeas and serve warm. The finished sauce should be creamy and thick enough to coat the chickpeas.

Marry Me Chickpeas Recipe
Ingredients
- 4 ounces (about half a 7-ounce jar) oil-packed julienned sun-dried tomatoes oil reserved
- 2 (15-ounce) cans chickpeas drained and rinsed
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 3 garlic cloves minced
- ⅛ teaspoon crushed red pepper flakes
- 1 cup whole milk
- 1 cup plain Greek yogurt
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh basil
Instructions
- Heat the reserved sun-dried tomato oil in a large skillet over medium heat. Add the chickpeas and season with the Italian seasoning, paprika, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until the chickpeas are warmed through and lightly golden in spots.
- Add the garlic and red pepper and cook for 2 minutes, until fragrant.
- Meanwhile, whisk together the milk and Greek yogurt in a bowl or spouted cup until well-combined.
- Lower the heat to medium-low and pour in the milk mixture, scraping up any bits from the bottom of the skillet. Let it simmer gently for 3–4 minutes, mixing occasionally, until the sauce is slightly thickened and creamy.
- Turn off the heat and stir in the sundried tomatoes and Parmesan cheese until smooth.
- Sprinkle basil on top and serve warm with crusty bread, pasta, rice, or mashed potatoes.

Recipe Variations
- Add mushrooms: Sauté 8 ounces of sliced mushrooms in the reserved sun-dried tomato oil until browned, then add the chickpeas and continue with the recipe.
- Add spinach: Stir in 2 packed cups of baby spinach along with the sun-dried tomatoes and let it wilt into the sauce before adding the Parmesan.
- Add artichoke hearts: Stir in 1 cup of drained and quartered artichoke hearts with the sun-dried tomatoes so they have just enough time to warm through.
Recipe Tips
- Give the chickpeas time to brown before adding the sauce. Letting them sit against the hot skillet for a bit helps them get lightly golden instead of just warming through.
- Take the skillet off the heat before adding the Parmesan. This gives the cheese a chance to melt into the sauce gradually without clumping or turning grainy.
- Let the sauce thicken before judging the consistency. It will look fairly loose when the milk mixture first goes in. Give it time to simmer gently before deciding whether it needs any adjustment.
Serving Ideas
- Serve with bread: I think something for scooping up the extra sauce is necessary for these Marry Me Chickpeas! Homemade pita bread, garlic cheese bread, or rosemary focaccia would all work well.
- Add on top of starch: The sauce goes really well with pasta, basmati rice, or brown rice, and even on top of mashed potatoes.
- Add a vegetable side: For something lighter alongside the creamy sauce, I’d go with roasted broccoli, air fryer asparagus, or sautéed green beans.
Troubleshooting
The skillet was probably too hot when you added the milk and Greek yogurt sauce. Keep the heat at medium-low and let the sauce simmer gently rather than boil. If it starts to separate, remove the skillet from the heat and stir gently to help bring it back together.
The sauce may need more time to reduce, or the chickpeas may have carried extra water into the skillet after rinsing. Let them drain well before cooking and give the sauce the full simmer so it has time to thicken.
Parmesan can clump when it gets too hot too quickly. Turn off the heat before adding it and stir until it melts into the sauce. Freshly grated Parmesan also melts more smoothly than pre-shredded cheese.
