Marry Me Chickpeas Recipe

These Marry Me Chickpeas simmer in a creamy sauce with sun-dried tomatoes, garlic, and Parmesan for an easy vegetarian meatless meal.

Ingredients

  • 4 ounces (about half a 7-ounce jar) oil-packed julienned sun-dried tomatoes oil reserved
  • 2 (15-ounce) cans chickpeas drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 3 garlic cloves minced
  • teaspoon crushed red pepper flakes
  • 1 cup whole milk
  • 1 cup plain Greek yogurt
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  • Heat the reserved sun-dried tomato oil in a large skillet over medium heat. Add the chickpeas and season with the Italian seasoning, paprika, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until the chickpeas are warmed through and lightly golden in spots.
  • Add the garlic and red pepper and cook for 2 minutes, until fragrant.
  • Meanwhile, whisk together the milk and Greek yogurt in a bowl or spouted cup until well-combined.
  • Lower the heat to medium-low and pour in the milk mixture, scraping up any bits from the bottom of the skillet. Let it simmer gently for 3–4 minutes, mixing occasionally, until the sauce is slightly thickened and creamy.
  • Turn off the heat and stir in the sundried tomatoes and Parmesan cheese until smooth.
  • Sprinkle basil on top and serve warm with crusty bread, pasta, rice, or mashed potatoes.

Notes

My Top Tip: Keep the sauce at a gentle simmer. High heat can cause the yogurt-based sauce to separate, so lower the heat once the milk mixture goes in and avoid letting it boil.
Storage: Store leftover Marry Me Chickpeas in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over low heat or in the microwave. If the sauce thickens in the fridge, stir in a small splash of milk while reheating.
