Homemade Flaxseed Granola with Greek Yogurt
- 3 cups rolled oats
- 3 tbsp flaxseeds
- 1/4 cup crushed pecans
- 1/4 cup agave syrup
- 3 tbsp coconut oil
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of salt
- In a large bowl, mix agave syrup, coconut oil, cinnamon, vanilla extract and salt.
- Add rolled oats, flaxseeds and pecans, and mix well.
- Spread granola on cookie sheet lined with parchment paper and bake for 30-40 minutes at 325F, stirring every 10 minutes, until the granola turns golden brown.
- Enjoy immediately or store in a container for up to 2 weeks.
- I served ours with Greek yogurt and chunks of a chocolate snack bar.
