These cranberry brie bites are so fun!

I’m obsessed with these cranberry brie bites. I could eat a whole tray without thinking twice. They’ve got everything I love in one little bite: flaky pastry, creamy brie, tart cranberry sauce, a little crunch from the pecans, and rosemary on top. They’re dangerous in the best way because it’s almost impossible to stop grabbing “just one more.” And as a bonus, this cranberry brie recipe is so easy for me to make. I use store-bought puff pastry and a mini muffin pan, so they come together fast with almost no effort.

Cranberry Brie Bites Ingredients

- Puff pastry: I love using store-bought puff pastry!
- Brie cheese: Any full-rind brie cheese will work for this recipe! You can also try goat cheese or taleggio (or any other cheese that melts really well).
- Cranberry sauce: I love using my homemade cranberry orange sauce for this recipe, but store-bought cranberry sauce is great, too.
- Pecans: Look for un-toasted pecans if you can!
- Fresh Herbs: I like to use rosemary or thyme for these cranberry brie bites.

Ingredients
- 1 sheet of puff pastry thawed
- 1 (8-ounce) wheel brie cheese cut into small cubes
- ½ cup cranberry sauce
- ¼ cup finely chopped pecans
- Fresh rosemary or thyme sprigs for garnish
Instructions
- Preheat the oven to 400°F.
- Roll out the thawed puff pastry on a lightly floured surface. Cut the puff pastry into 24 squares (about 3 inches each). Press each square into a non-stick mini muffin tin to form small cups.
- Place a cube of Brie into each puff pastry cup. Spoon about 1 teaspoon of cranberry sauce over each piece of Brie and sprinkle chopped pecans on top.
- Place the muffin tin in the oven and bake for 18-20 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly.
- Top each bite with a small sprig of rosemary or thyme before serving.

- My Top Tip: Use brie that’s completely enclosed in a rind. When you cut your brie into 24 pieces, the rind on top and bottom of each piece helps to keep the brie in place when it’s baked. Otherwise, you may notice the brie spread all over the muffin tin.
- Storage: You can store any leftovers in an airtight container for 3 to 4 days. Enjoy them cold or reheat them in the oven (or toaster oven or air fryer!) for a few minutes until warmed through. Freezing not recommended.

Recipe Tips
- Only grease your muffin tin if it’s not non-stick. When I tested these in my lightly greased non-stick muffin tin, I found that the bites were extra oily on the bottom. That’s because puff pastry is made of butter and flour. So, I don’t think it’s necessary to grease your muffin tin unless it’s not non-stick!
- Use brie that’s completely enclosed in a rind. When you cut your brie into 24 pieces, the rind on top and bottom of each piece helps to keep the brie in place when it’s baked. Otherwise, you may notice the brie spread all over the muffin tin.
- Don’t try to thaw your puff pastry at room temperature. This might seem like a good idea, but if you try to thaw the puff pastry at room temperature, it’ll defrost unevenly and end up being hard to roll out.

Because they’re small, these should cook pretty quickly! The bites are done when the puff pastry is golden brown and the cheese looks bubbly all over.

How am I supposed to thaw the puff pastry if I don’t do it at room temperature?
Hi Jessica, I recommend thawing the frozen puff pastry in the fridge overnight! I find it’s the easiest to roll out that way. Hope that helps!!
