  1. Let your pan heat up. One way to ensure that your pancakes are light and fluffy is to make sure your pan is hot enough when you pour the batter in.     Made as is with no maple syrup on top and was very disappointed. After trying the first piece, it was bland with a strong taste of the powder and I didn’t even use the full measure so 1TB would’ve been way too much! I mixed the bowl some more and checked to see if the powder was expired, it wasn’t – 5/2025 exp date, GF and Al-free. Second piece, same. I added the other half piece banana amongst other things. I trusted the “ripe” note and used fairly spotty bananas, didn’t wait for very ripe bananas [I should’ve]. I’m sure if it had fruit preserves dripping off of it and other foods alongside it I wld rate it higher but pancakes should not require accoutrements.

    I followed the recipe as instructed. Precise measurement. The pancake did not form. It was the same exact measured ingredients. Such a waste of time and money.

        In the recipe it said we can substitute all-purpose flour with almond flour to make it healthier. I did that with the same measurement. It didn’t form to the point where the bottom is cooked already but if I flip the pancake, it will get collapse. If I let it cook longer to make it form, it will burn the bottom side. I retried and let it cook longer which burned the bottom but when I flip it, it still isn’t formed and it still collapsed. I’m cooking at the lowest setting already which also took longer time. I tried adding almond flour, it still didn’t form. I added all-purpose flour and it formed better. Maybe we can’t substitute all-purpose to almond flour?

      I don’t recommend keeping the batter in the fridge with the bananas, as they oxidize pretty quickly and turn brown. Without bananas, it should keep for 2-4 days! The batter also freezes well (with the bananas included). Hope that helps!!

    This is by far the easiest and the most delicious pancake recipe I have ever come across. I have been making them for over a year and it never fails. No added sugar for hidden calories so I can easily add the calories count with the amount of syrup or honey or PB or jam I indulge with the pancake.     I will say these were fluffy, but also quite bland. The baking powder (aluminum free) was overpowering and even adding vanilla and a little extra cinnamon didn’t help much. I will definitely try again with less baking powder and also some sugar. I don’t use syrup but I’m sure that helps.

      Hi Lydia, the baking powder gives the pancakes their fluffy texture. You can also help them rise by using self-rising flour or whipping egg whites. If you whip egg whites, I recommend adding the yolk and banana to a bowl and mixing as indicated in the instructions (whisking the egg whites into soft peaks in a separate bowl) and then folding them into the banana and yolk mixture. But be careful not to overmix. Hope that helps!!

      Great question! The baking powder is what gives the pancakes their fluffy texture. If you don’t have any on hand, you can help them rise by using self-rising flour or whipping egg whites. To whip egg whites, I recommend adding the yolk and banana to a bowl and mixing as indicated in the instructions, whisking the egg whites into soft peaks in a separate bowl, and then folding them into the banana and yolk mixture. Just be careful not to overmix. Hope that helps!!

    These turned out perfectly! I doubled the cinnamon to 1 tsp because we love cinnamon, but it still wasn’t a prominent flavor in the pancakes. The banana was the star.     This was simple to make and delicious to eat. They were a hit with my pancake connoisseurs so I was glad I doubled the recipe. Will definitely make them again. Enjoyed with maple syrup but also spread one with Nuttzo and a little syrup (yum!). I actually did not use fresh bananas but rather, really ripe bananas that had been previously frozen. Popped them in the microwave to thaw quickly and just measured out the amount needed. What I appreciated was that the pancakes were easy to flip on my griddle and each pancake came out perfectly golden. Next time, I may slice up bananas thinly to lay on top of the batter before flipping and allow the bananas to caramelize before taking off griddle. Perhaps sprinkle chopped walnuts, too…? Thanks for our tasty breakfast this morning!

      When baked goods are rubbery, the culprit is usually gluten formation. This comes from over mixing your batter.

      The amount and quality of the banana will determine how much this tastes like banana. The quantity isn’t the problem since it uses 3:4 banana to flour by volume (more than most banana bread recipes).

      The problems are your technique and quality of ingredients, not the recipe. Keep practicing and you’ll get better!

    This is a delicious recipe! Love that it doesn’t add any sugar or sweeteners. A tip for others: when trying to measure the bananas, I took the amount of bananas needed in cups and converted it to grams to get a somewhat more precise measurement on my scale. There was a website somewhere on google that had a conversion based on the type of banana you were using (diced, sliced, mashed, etc) and that helped me determine that I needed just over 500g of mashed banana (I tripled the recipe). Maybe that makes me a bit of a perfectionist but the consistency was great! Definitely bookmarking this recipe.

    I took this recipe and did my own spin on it. My kids and I love these! This is what I changed.

    3/4 cup flower and 1/4 cup ground flax seed, 2 full bananas, reduce milk to 1/2 cup, add 1 tablespoons of 100% maple syrup, 1 teaspoons vanilla, reduced baking powder to 1 teaspoon, add 1 teaspoons baking soda and increased cinnamon to 1 teaspoon.

    I did this to make them a bit healthier. I make double batches and freeze them. We toast them in the morning and have them on the way to daycare! Thank you so much for the recipe!!

      Hi Anna! It does sound like the batter may have been a little thick. That being said, oftentimes, American pancakes don’t turn out perfectly round. It just depends on how they get added to the pan. Usually, you want to pour a serving of batter in a singular spot, and the pancakes naturally flare out as they cook.

The recipe is straightforward and I followed it step by step and it turned out great. I added dark chocolate chips as well. The chocolate chips went perfect with the banana flavor.     Also, when I make any recipe it will say it makes “X” amount and I usually never get the amount it says, but this recipe said it makes 8 pancakes and that’s how many it actually made.

    Prep was very easy. She is right, do not have the temp too hot or it browns quickly. However,despite the first pancake it was still amazing. From the first bite it was magical! They were fluffy, moist, and very flavorful! I topped mine with sliced bananas and strawberries. I will def make this recipe again.

    I’ve never used more than a level teaspoon of baking powder with 1 cup of flour, I’m sort of afraid to use a whole tablespoon. Do they come out enormously puffy with this much baking powder?

      They come out as pictured above, not too fluffy – just right fluffy, in my opinion. Just make sure to use aluminum-free baking powder, as others have had issues with taste from the baking powder. Let me know what you think when you make them!

        I made these on Sunday. Really good. My giant ripe banana only made a half cup of mashed but it was plenty to make these pancakes sweet and banana-y. I didn’t use the full tablespoon of baking powder but I used 2 teaspoons (double my usual) and they were fluffier than my usual so it was a nice change. We liked them a lot so thank you for posting this recipe.

    These are the best pancakes! They have the texture of normal pancakes and without any added sugar they are plenty sweet. We don’t even put maple syrup on top.
    I often make them with white whole wheat flour instead of all purpose white flour and they come out perfect. It’s our favorite use for those brown bananas in the freezer; just thaw them before adding.

    Excellent recipe! Followed your directions except I added a bit more banana (what would I do with half a ripe banana?). The pancakes came out wonderful! I did also add a whole teaspoon of cinnamon because I love cinnamon. My mom sent me home with a bunch of ripe bananas to make banana bread but my banana bread has never quite come out right. I love pancakes more and this recipe is a real keeper! Thanks so much for sharing!

    These are pretty good. They tasted a little bitter though due to the amount of baking powder. I added some brown sugar in an attempt to mask that flavor a bit and make them sweeter. They were much better after I did that.

    I rarely write reviews on recipes, but want to spare someone else from wasting the ingredients. Sadly, these were pretty bad. The recipe calls for WAY too much baking powder. They came out bitter and left a bad, almost burning taste in my throat. I followed the recipe precisely. Even did a double take on the baking powder because it seemed like too much. But I trusted the recipe and added the 1 TBSP it called for. My guess is that 1 teaspoon would have been better. Who knows, but definitely not making these again 🙁

        Regarding BAKING POWER –
        Please note that if you use baking powder that contains ALUMINUM (which many brands do- ClabberGirl is one of them) you will have a “tinny”, “sharp”, “bitter” taste from any recipe that asks for a large amount.
        Please choose ALUMINUM-FREE
        BAKING POWER (like Rumford)
        Trust me, you’ll taste the difference.

    good recipe. I made these today for my 76yr sugar oholic mother. this is a brilliant recipe for anyone just as it is no need to change. Except her she wants it sweeter. so i added 5TB maple syrup , but She had to give and take so I changed it to wheat flour. Plus I added my canned blueberries ( No sugar :)…. She enjoyed these so next time i think I’ll try something different besides maple syrup to cut down the sugar. she has lost 15 much needed LB since Ive taken over my parents cooking. thank you for the recipe.

        I’m not a banana lover or a pancake lover but these exceeded my expectations. My husband let some bananas get brown on the counter and I made these instead of my usual butter and sugar laden banana bread. I personally liked the adsence of added sugar and oil. The baking powder does add a metallic taste but I didn’t have aluminum-free so oh well. I did add a teaspoon of vanilla but everything else was unchanged. Husband loved them and I like them enough to add them to our breakfast rotation.
