These Cranberry Brie Bites are sooo good! They are little pockets of deliciousness with flaky pastry, creamy brie, tart cranberry sauce, crunchy pecans, and rosemary. It’s so incredibly hard to stop eating them!

Not only do these cranberry brie bites taste great, but they’re super easy to make thanks to puff pastry and a mini muffin pan. When baked, puff pastry, well.. puffs up, showing off its buttery layers. The mini muffin pan shapes the pastry into a cup, so it holds the fillings well! When baked, the brie turns oozy and creamy, the cranberry sauce gets all gooey, and the pecans warm and toasty.

Ingredients to Make Cranberry Brie Bites

Ingredients for recipe: puff pastry, pecans, brie wheel, cranberry sauce, and fresh rosemary.
  • Puff pastry: I recommend thawing the puff pastry in the fridge overnight so it rolls out easily!
  • Brie cheese: Any full-rind brie cheese will work in this recipe! Use your favorite. Instead of the brie, you could use goat cheese or taleggio—or any cheese that melts really well.
  • Cranberry sauce: You can use homemade or store-bought! I love my cranberry orange sauce because it tastes so fresh and bright.
  • Pecans: You want to use untoasted pecans because they’ll toast as the cranberry brie bites bake!
  • Rosemary or thyme: Fresh herbs add a pop of flavor.
  • Swap out the cranberry sauce. A lot of fruit jams would be delicious in these puff pastry bites! I really want to try cherry jam.
  • Make it gluten-free. Just use gluten-free puff pastry!
  • Top it off with flakey salt. This would just make everything taste brighter and even better! (Salt enhances flavor!)

How to Make Cranberry Brie Bites

As long as your puff pastry’s thawed, these couldn’t be easier to make. They basically just involve rolling, cutting, filling, and baking!

Step 2: Cut the puff pastry into squares.

Step 6: Bake until the puff pastry is golden brown and the cheese is bubbly.

Tips for Making the Best Cranberry Brie Bites

  1. Grease the muffin tin only if it’s not non-stick. When I tested these in my lightly greased non-stick muffin tin, I found that the bites were extra oily on the bottom. That’s because puff pastry is made of butter and flour. So, I don’t think it’s necessary to grease your muffin tin unless it’s not non-stick!
  2. Use brie that’s completely enclosed in a rind. When you cut the brie into 24 pieces, the rind on top and bottom of each piece helps to keep the brie in place when it’s baked. Otherwise, you may notice the brie spread all over the muffin tin.
  3. Make sure the puff pastry is overlapping over each muffin tin. That gives them room to puff and expand and not sink into the cranberry sauce and cheese! It’ll also make sure the pastry’s crispy.
  4. Don’t try to thaw the puff pastry at room temperature. This might seem like a good idea, but if you try to thaw the puff pastry at room temperature, it’ll defrost unevenly and end up being hard to roll out.

Ingredients
  

  • 1 sheet of puff pastry thawed
  • 1 (8-ounce) wheel brie cheese cut into small cubes
  • ½ cup cranberry sauce
  • ¼ cup finely chopped pecans
  • Fresh rosemary or thyme sprigs for garnish

Instructions

  • Preheat the oven to 400°F.
  • Roll out the thawed puff pastry on a lightly floured surface. Cut the puff pastry into 24 squares (about 3 inches each). Press each square into a non-stick mini muffin tin to form small cups.
  • Place a cube of Brie into each puff pastry cup. Spoon about 1 teaspoon of cranberry sauce over each piece of Brie and sprinkle chopped pecans on top.
  • Place the muffin tin in the oven and bake for 18-20 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly.
  • Top each bite with a small sprig of rosemary or thyme before serving.
