My Favorite simple salad

This simple green salad is what I make when I don’t feel like making a salad, but still want a salad (you know what I’m talking about!). It’s just a mix of crunchy, fresh things I almost always have on hand: romaine, spinach, cucumbers, and a few radishes if they’re hanging around. I toss in avocado and some toasted seeds to make it feel like I tried. The dressing is super simple; sometimes I just shake it up in a leftover jam jar and pour it right on top.

This makes a great side salad to serve with any main proteins like Grilled Salmon, Pan Seared Chicken Breasts, or Lemon Garlic Shrimp!

Simple Green Salad Ingredients

Ingredients: green onions, Persian cucumbers, oil, avocado, seasonings, radishes, romaine, red wine vinegar, Dijon mustard, pumpkin seeds, and spinach.
  • Mixed greens: I like to combine romaine lettuce and baby spinach for this salad, but you could use one or the other or try something different like kale.
  • Cucumbers: I prefer seedless cucumbers, like Persian or English ones.
  • Green onions: These have a mild onion flavor! You could also use thinly sliced red onion.
  • Radish: I like the peppery bite, and I think it goes well with the rest of the ingredients.
  • Avocado: A ripe avocado should feel slightly soft to the touch, but not have any overly soft or dented parts.
  • Seeds: Pumpkin or sunflower seeds are my go-to’s for this salad, but toasted, chopped almonds or walnuts would also be great.
  • For the dressing: This 4-ingredient dressing requires just olive oil, red wine vinegar, dijon mustard, and garlic powder!

How to Make Simple Green Salad

Step 2: Whisk to combine the dressing.

Step 3: Place the salad ingredients in a large bowl. Pour the salad dressing overtop.
After tossing salad together.
Step 4: Toss to mix the salad with the dressing.

For the Salad

  • 2 small heads romaine lettuce
  • 2 cups packed baby spinach
  • 2 Persian cucumbers sliced
  • 4 green onions sliced
  • 4 large radishes slices
  • 1 avocado diced
  • ¼ cup toasted pumpkin seeds or sunflower seeds

For the Dressing

Instructions

  • Place the salad ingredients in a large bowl or divided into 4 bowls.
  • Whisk the dressing ingredients together in a small bowl or jar. Pour the dressing over the salad and toss to combine. Serve immediately after tossing.

Notes

Storage: If you’re going to store this salad, make sure it’s undressed—otherwise, it’ll get very soggy! The chopped lettuce and veggies will last for a couple of days in an airtight container in the fridge. You can make the dressing up to 5 days ahead.

Recipe Tips

  1. Use the freshest ingredients possible. This salad tastes best with the best veggies! Use the highest quality ones you can find.
  2. Shake the dressing in a jar. I find this is the easiest way to make sure the dressing is fully emulsified!
  3. Cut everything into bite-size pieces. I certainly don’t want to have to use a knife and fork to eat salad. I recommend cutting the lettuce and veggies into similar-sized, small pieces.
  4. Toss the salad right before serving. Romaine and spinach will get soggy if they sit in the dressing for too long. That’s why I add the dressing and toss the salad right before I want to eat it.
