Simple Green Salad Recipe

This easy, simple green salad combines romaine and spinach with cucumbers, green onions, avocado, and radish. The homemade dressing has just four ingredients and is super simple to make.

Ingredients

For the Salad

  • 2 small heads romaine lettuce
  • 2 cups packed baby spinach
  • 2 Persian cucumbers sliced
  • 4 green onions sliced
  • 4 large radishes slices
  • 1 avocado diced
  • ¼ cup toasted pumpkin seeds or sunflower seeds

For the Dressing

Instructions

  • Place the salad ingredients in a large bowl or divided into 4 bowls.
  • Whisk the dressing ingredients together in a small bowl or jar. Pour the dressing over the salad and toss to combine. Serve immediately after tossing.

Notes

Storage: If you're going to store this salad, make sure it's undressed—otherwise, it'll get very soggy! The chopped lettuce and veggies will last for a couple of days in an airtight container in the fridge. You can make the dressing up to 5 days ahead.
