  • Green bell peppers: Bell peppers add a touch of sweetness to the stew. Cut the bell pepper into bite-sized pieces.
  • Onions: I like to use yellow onions because they’re sweet and have a milder flavor, but you can also use white or red onions.
  • Garlic: Garlic is a must in this recipe. It adds so much flavor!
  • Middle Eastern spices: I use a combination of 7-Spice (baharat), cumin, paprika, and salt to season this stew. You can find these spices in the spice aisle of your grocery store.
  • Olive oil: Helps roast the beef and the vegetables, making them tender and flavorful.
  • Tomatoes: I like to use canned diced tomatoes because they’re already chopped and ready to go. You can also use crushed tomatoes if you’re not a fan of chunks of tomatoes in your stew.
  • Beef broth: You’ll need beef broth to create the gravy for this stew. I like to use low-sodium beef broth so I can control the amount of salt in the dish.
  • All-purpose flour: A little all-purpose flour goes a long way and helps create a thick gravy.

  1. Cut your veggies into uniform pieces. To make sure everything cooks evenly, it’s important to cut your vegetables into uniform pieces. That means all of the carrots should be the same size, as well as the potatoes, onions, and bell peppers.
  2. Use a large roasting pan or Dutch oven. You’ll need a large enough pan to fit all of the ingredients. I like to use either a roasting pan or a Dutch oven.
  3. Don’t overcrowd the pan. Make sure there’s enough space in the pan so that the beef and vegetables have room to roast and brown. If your pan is too crowded, the beef and veggies will steam instead of roast.
  4. Sear the beef before roasting. To get that nice brown crust on the beef, you can sear it before roasting. Sear the beef in batches so that each piece has enough space in the pan to brown.
  • Add in some more root vegetables. Turnips, parsnips, and sweet potatoes would all be delicious in this recipe.
  • Switch up the protein. If you’re not a fan of beef, you could use lamb or chicken instead.
  • Make it vegetarian. Just leave out the meat, use vegetable broth and double up on the veggies
  • Add in some fresh herbs at the end. I like to add in a handful of chopped fresh parsley or rosemary at the end for some extra flavor.

  • 2 pounds beef stew meat cut into 1-inch cubes
  • 1 onion chopped
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 2 Yukon Gold potatoes diced
  • ¼ green pepper chopped
  • 2 garlic cloves sliced
  • 14- ounce canned diced tomatoes
  • 1 tablespoon 7 spice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • 2 tablespoon olive oil
  • 1 cup low sodium vegetable broth or beef broth
  • 1 tablespoon all-purpose flour
  • Fresh parsley for serving
  • White rice for serving (optional)

Instructions

  • Preheat the oven to 350°F.
  • Place all the ingredients in a 9×13 oven safe baking dish. Toss well to combine all the ingredients together.
  • Cover with aluminum foil and bake in the oven until the vegetables soften and the beef is cooked through, 75-90 minutes.
  • Remove the foil and broil for an additional 3-5 minutes.
  • Serve with rice and fresh parsley, if desired.

Notes

Storage: Store in the pan it was cooked covered tightly with tinfoil or plastic wrap if you’d like you can also use an airtight container. This recipe will keep for up to 4 days in the refrigerator.

    Love this recipe. My family and I love the Middle Eastern spices and smell. I also see you can make this in a slow cooker. Do I need to sauté or brown any of the ingredients before dumping it all in if I opt to use the slow cooker this time around?

      Yes, it just might not be as thick. If you want to thicken it up without flour, you could stir in about 1 tablespoons of cornstarch slurry before placing it under the broiler.

      Yes, it can be done in an instant pot. You’ll have to brown the beef first, then remove from the Instant Pot, cook the vegetables and then return everything together. Cook at manual high pressure for 30 minutes, then let the pressure release naturally for 15 minutes. But if you’d like I actually have an Instant Pot Beef Stew recipe coming out soon.

    Delicious! Easy, simple, healthy, and SOO GOOD! I seared the meat with garlic and half of the onions….then had the vegetables and other ingredients. Used garlic and herb seasoning instead of the 7 spice because it’s what I had. I added 1 tbsp of Worcestershire sauce to the liquid mix. So good. My mom taught me that the celery leaves create a nice flavor in searing and cooking stews, so I used the leaves of the celery sticks as well. Recipe will be in rotation. Every recipe I have made from here is SPOT ON!! Thank you for creating these for us!!

    My family loved this recipe! I substituted kale for bell pepper, 1 1/2 fresh Roma tomatoes for the 14- ounce can diced tomatoes, and herbs proveance for the 1 tablespoon 7 spice. I used what I had in stock. The rice was a nice touch. I also baked some bread that paired well with the sauce in the stew. Thank you!

    I don’t know where I went wrong the cinnamon in this dish from the 7 spice I did not like. And it was all liquid not close to a gravy. I followed step by step.

      The cinnamon can be an acquired taste, so feel free to leave it out moving forward! To make it thicker, you can add more all-purpose flour, as it helps create a thicker gravy.

    This is the very first time making Beef Stew! For some reason, it always seemed daunting to get the beef perfectly made but this recipe was so easy. I followed the directions exactly as noted and the beef was so tender and all the flavors from the spices were just so tasty. I’m used to the traditional spices in stew and wasn’t sure if I’d like the Middle Eastern spices but it really worked! At first the taste seemed so different from what I was used to but it was absolutely delicious. I made my own 7 spice blend I’m wondering if I made it correctly. I need to buy it online to really compare the flavor.

    Can’t wait to try this. I don’t have any time to make dinner and this sounds super do-able. What can you recommend in place of tablespoon of 7 spice? I have garam masala. We love all the spices but I don’t have 7 spice.

Or you can make your own 7 Spice: mix together 1 tablespoon each of ground black pepper, paprika, ground cumin, ground coriander, ground cloves, ground nutmeg, and ground cinnamon.
