Chicken burgers are my go-to when I’m craving that classic burger experience but want to keep things a little lighter. I keep mine juicy and flavorful with just a touch of mayo in the ground chicken mixture and add minced onions, parsley, and garlic. I find these chicken burgers to be just as satisfying – without the heaviness.

I know, I know… I can hear some of you already thinking, “But chicken burgers are dry!” Not these! With a little mayo mixed in, plus some breadcrumbs to hold it all together, the chicken burger patties stay juicy and moist!

  • Mayonnaise: This is the secret to keeping these chicken burgers super juicy. A couple of tablespoons mixed in with the chicken locks in moisture and adds a hint of creaminess.
  • Minced Onions & Garlic: These bring a punch of flavor, making the burgers more savory and well-rounded.
  • Fresh Parsley: This adds a fresh, herby brightness that cuts through the richness of the chicken and mayo.

  • Avocado Slices: For a creamy, healthy addition, add some sliced avocado. It adds a buttery texture that pairs well with the juicy chicken.
  • Pickles: If you’re a fan of that tangy bite, pile on some pickles.
  • Cheese: Whether it’s cheddar, pepper jack, or even a slice of gouda, adding cheese gives that extra indulgent layer of flavor.
  • Spicy Mayo or Aioli: Want a little heat? Slather on some spicy mayo or aioli.
  • Think outside the box: You can add smashed roasted garlic, toum, avocado crema, cucumber yogurt sauce, cilantro yogurt sauce, tzatziki and so much more!
  • Swap Ground Chicken for Turkey: If you don’t have ground chicken on hand or prefer turkey, you can easily make the switch. Ground turkey works just as well and keeps the burgers lean and flavorful.
  • Use Greek yogurt instead of mayo: If you aren’t a fan of mayo, you can still use Greek yogurt in your chicken burger to keep it moist. I do this sometimes when I’m making Grilled Greek Yogurt Chicken Burgers.
  • Try Panko Instead of Breadcrumbs: For a crispier texture, swap out the Italian breadcrumbs for panko.
  • Add Cheese: Mix in some shredded cheddar, mozzarella, or even a bit of feta for an extra layer of flavor and creaminess inside the burger itself.
  • Spice it Up: If you like a little kick, add some cayenne pepper or a dash of hot sauce to the mix. You can also top the finished burgers with spicy mayo or jalapeños for extra heat.

  1. In a medium bowl, add all of the ingredients.
  2. Mix together until well combined, being careful not to overmix. It helps to use your hands to make sure the ingredients are evenly distributed.

  • Cook the chicken burgers on the preheated grill, flipping halfway through. You want to cook until the patties are golden brown and cooked through. Then, you’re ready to assemble the chicken burgers with buns and toppings of choice.

Tips for Making the Best Chicken Burgers

  1. Press down in the middle of each patty with your thumb. This will help the burgers to cook evenly through and avoid shrinking.
  2. Use your hands to mix the the patties. It’s a little messier but the ingredients will combine much easier this way. You can wear tight fitting plastic cloves to keep your hands clean.
  3. Don’t over mix the chicken burger mixture. Everything should be just combined. If you over mix, the burgers can become tough and chewy.
  4. Once on the grill, don’t flatten the burger with a spatula. When you do this the meat will lose some of its juices. Just flip them, don’t be tempted to press them down.

To reheat, you can pop them in the microwave for about 30-45 seconds, but for the best texture, reheat them in a skillet on the stove over medium heat for a few minutes on each side, or in the oven at 350°F until warmed through.

Can you freeze chicken burgers?

Yes, you can freeze them before or after cooking for up to 3 months. To freeze, stack them between wax or parchment paper in a freezer-safe container.   • 1 pound ground chicken breast
  • ½ cup Italian breadcrumbs
  • 2 tablespoons mayonnaise (vegan or regular)
  • 2 tablespoons onions minced
  • 1 tablespoon fresh parsley
  • 1 garlic clove minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Hamburger buns for serving
  • Lettuce tomato and red onions, for serving

Instructions

  • In a medium bowl, add ground chicken, breadcrumbs, mayonnaise, onions, parsley, garlic, paprika, salt and pepper. Use your hands to combine all the ingredients together until blended, but don’t over mix.
  • Form the mixture into 4-6 equal patties. Press down in the middle of each patty with your thumb to ensure even cooking of the chicken burgers.

Stovetop Cooking

  • Preheat a large skillet or non-stick pan over medium heat. Add a little oil to coat the bottom of the pan to prevent sticking.
  • Once the pan is hot, add the chicken burgers. Cook for about 5-6 minutes on the first side, until the bottom is golden brown. Then, flip and cook for an additional 5-6 minutes on the other side.
  • Use a meat thermometer to ensure the internal temperature of the burgers reaches 165°F. If they need more time, reduce the heat slightly and continue cooking until fully done.

Grilling

  • Preheat grill to medium-high heat and oil the grates.
  • Cook the chicken burgers on the preheated grill until the internal temperature is 165F, about 10 minutes total, flipping halfway through.
  • Assemble the chicken burgers with hamburger buns and toppings of choice.

    I made these the other night, but I didn’t have Italian breadcrumbs. I added 1/2 Tsp. dried oregano to the mixture. When I made one in a skillet, it did slightly fall apart. I decided to reform the patties after adding 1 large egg. I also added a Tbsp. grated Parmesan cheese to your recipe.

    All in all, very tasty & I plan on using either ketchup or a homemade cilantro mint chutney on top in the sesame seed bun.

    Thanks for your this very nice recipe BUT you write in the tips “To make it gluten-free, you can use quick oats, almond flour or panko breadcrumbs.” Panko breadcrumbs? They are definitely not gluten-free. They are made from white bread; just processed differently.

    Great recipe and very easy to adjust to your liking. The best way of cooking in my opinion is to put the patties in the fridge for 15 minutes to firm up, then brown both sides on high heat in a cast iron pan. Once browned I throw the pan in the oven to finish. So yummy!

    I am an old lady who has been cooking for over 60 years and have never commented on anything on the Internet, however I had to tell you how much my friends and family enjoyed these burgers! I did add fresh chopped parsley, and made them smaller for slider size buns. Also, I learned from making turkey burgers to pat them out and let them sit on foil for at least an hour in the fridge to firm up. I think the next ones I make I might try a mesquite seasoning.

    These Chicken Burgers are delicious!! I am allergic to mammal meat so can’t eat a regular beef burger. These really hit the spot! So tasty & easy to make. The first time I made them I was out of bread crumbs so used quick oats instead & it worked great so that’s what I’ve done going forward. You can add any seasonings you prefer.     I. Made these burgers as thick sausage shapes and grilled them with a few sprays of rapeseed oil.
    They were totally delicious. I used one egg to bind them in place of the Mayo – personal preference.
    We wrapped them in sweet gem lettuce leaves in place is burger buns and the result was a very tasty, low carb, crunchy dinner that was very filling!

I was going to make chicken burgers from scratch the other night but was nervous about it as it had been long since i made homemade burgers but your recipe was super quick, easy and understandable. I somehow missed the substitution section and as I don’t eat mayo I just left it out (and didn’t put the egg or sour cream but next time I probably will).     We had some frozen mince left over so we decided to make some burgers, my partner found this recipe. We had to double the bread crumbs as it wasn’t binding too well but could have been from the mince being frozen and releasing more fluid.

    Just a thought from the note for gluten free options: Pablo breadcrumbs are not gluten free by default. They’re made from a Japanese style of bread but unless it says so explicitly it’ll have gluten.

    Thank you for sharing this recipe. It was very easy and quick to make but more importantly it was very tasty. I’ve made chicken burgers many times before but had given up because of their blandness. I shouldn’t really be eating mayonnaise but as the chicken mince is so low in fat it balances itself out. I might try the yoghurt version next time but I suspect I will have to up the spices to compensate for the taste.

    100 out of 5 (actually higher) – top class, best I have ever tasted! Here from the land down under (Australia) we love our burgers. I have decided to never buy shop bought patties (beef, chicken/other) again. After making these I could not believe the flavour, they were moist and cooked so easily. I made BLT burgers – chicken pattie, rindless bacon, lettuce, tomato & added sliced red onion with aioli on burger buns. Cooked the bacon first and with the small amount of leftover fat, I cooked the patties in a non-stick pan. I love this site, and Yumna you are a genius. Every recipe I have tried is amazing.     This is a great recipe. I found that if you wear plastic gloves and add olive oil to them and the plate you use before grilling them, it allows for much easier handling of the ground chicken. Also I mix all the ingredients together and then mix in the mayonaise. It allows for better dispersion.

I followed the recipe, but substituted breadcrumbs with almond flour (1:1), and parsley with sage (but any mild fresh herb will work). Wow! I still cannot get over just how good the chicken patty tastes. I ate it over a bed of lettuce, drizzled lightly with lemon vinaigrette.

    I doubled the batch, and now have delicious and nutritious lunch all week (+more). So happy!

    Amazing! I made sliders from this recipe with a teeny bit of cayenne. Everything else followed the recipe. Sandwiches were with brioche (small slider size) lettuce, red onion, tomato, and cheddar. EVERYONE freaked out and begged me for more. All 20 sliders are gone way too fast

    Just made these and they were beyond my expectations! We did go a little heavy on the garlic and added a bit more Mayo to compensate for accidentally adding too much bread crumb. They had a delicious crispy top and bottom and were SO moist inside. Def making again!

    These came out fantastic!
    I made some minor adjustments that worked in a pinch! I didnt use parsley. Instead of minced garlic I used garlic powder. Instead of minced onions I used a packet of onion soup mix. I had plain breadcrumbs so added Italian seasoning to them.
    They were delicious! My husband says we have to add this to our meal rotation now!!!
    I have leftovers to reheat. At what temp and how long would you reheat in the oven?

      Thank you so much! I’m glad it worked with those modifications too! To re-heat, you can thaw in the fridge overnight and reheat on the stovetop or in the oven. I would reheat at 400F for roughly 5 minutes, flipping halfway.

    we used Miracle whip instead of mayo. If the flavour is too intense you could use 1/2 Italian and 1/2 plain breadcrumbs.
