My Creamy Cucumber Salad Is So Good!

This creamy cucumber salad is one of my favorite easy sides to make with cucumbers. It’s coated in a simple dressing that adds flavor without overpowering the cucumber. It’s just sour cream, a splash of red wine vinegar, fresh dill, garlic, and red onions.

I tend to make cucumber salads a lot in the summer, and this recipe legit takes 5 minutes to chop, toss into a bowl, and mix.

Creamy Cucumber Salad Ingredients

  • Cucumbers: I like to use English cucumbers because they’re thinner and have fewer seeds than regular cucumbers. However, you can use whatever type of cucumber you have on hand, like Persian cucumbers.
  • Red onions: I prefer red onions in this salad because they’re slightly sweeter than white or yellow onions, but use whatever variety you have available.
  • Sour cream: I usually go for full-fat sour cream, but you can use light or non-fat if that’s your preference. If you’re not a fan of sour cream, use Greek yogurt instead. If you prefer not to use any dairy in this recipe, you can make this with plain unsweetened coconut yogurt or almond yogurt.
  • Dill: Fresh dill is best, but you can also use 1 teaspoon of dried dill if that’s all you have. Dried dill is stronger than fresh so don’t go too crazy with it.
  • Red wine vinegar: If you don’t have red wine vinegar, the same amount of white wine vinegar, apple cider vinegar or lemon juice works.
  • Seasonings: I add a little bit of sugar to balance the acidity, and season the salad very simply with garlic powder, salt and pepper.
  • Feta cheese: About ¼ cup of crumbled feta adds a little saltiness and extra creaminess.
  • Sun-dried tomatoes: ¼ cup, finely chopped, brings a slightly sweet, chewy texture.
  • Cherry tomatoes: ½ cup of halved cherry tomatoes is a great addition.
  • Avocado: Dicing up one small avocado makes the salad even creamier and adds a little richness.
  • Capers: A spoonful (about 1 tablespoon, drained) gives the salad a nice briny flavor.

How to Make Creamy Cucumber Salad

Step 1: Add the sour cream, vinegar, dill, sugar, and garlic powder to a medium bowl.

Step 2: Mix until well combined. Taste and season with salt and pepper.
Cucumber slices and sliced red onion on top of dressing.
Step 3: Add the sliced cucumbers and red onions on top of the sour cream dressing.

Step 4: Gently fold the sour cream and cucumbers together until well combined.

My Best Easy Creamy Cucumber Salad Tips

  1. Thinly slice your cucumbers and onions. To get even slices, I recommend using a mandolin or even a vegetable peeler. If you don’t have one, just try and make the most even cuts you can with a knife.
  2. Use fresh dill. Fresh dill has a much better flavor than dried dill. If you can’t find fresh dill, you can use dried, but you’ll need to use less since it’s more potent. Start with ¾ teaspoon and adjust to your taste.
  3. Taste as you go. Be sure to taste the salad before serving and adjust the seasoning as necessary. You may want to add more salt, pepper, or vinegar, depending on your preferences.
  4. Serve immediately. This creamy cucumber and onion salad is best served immediately after it’s made. If you let it sit for too long, the cucumbers will release water and make the salad soggy.

Notes

Storage: Cucumber salad is best served immediately for the best quality. Cucumbers will start to weep and make the salad watery.

    I made this tonight as I had been seeing all these viral cucumber salads but they either had salmon or just didn’t scream YUM to me. Although I love salmon and may try it in another cucumber salad, I just kinda wanted something refreshing to snack on that really focused on the cucumber, onion, dill, and sour cream. I’m telling you, this is IT and it’s EFFORTLESS! I am now eating more at 2:18 😂 and I am loving the way the flavors have married together even more from sitting in the fridge half the night!!! This is really super yummy but also so light and refreshing, I will be making this a staple in my household. Thank you so much for sharing! All I did differently was use regular ACV since it’s all I had handy and I used a pinch more garlic powder but definitely delicious!!

    I recommend soaking the sliced red onion in cold water for at least 15 minutes before adding to the salad. This will take away some of the bitterness of the onion so it is not so overwhelming.

      Wow, how fun! I would probably make the recipe as written, times 10. You may want to keep the dressing and prepared cucumbers separate and toss them together right before the party starts to preserve the texture.

      Yes, some others have tried this by sprinkling the cucumbers with a little salt and letting them sweat in a strainer for about 30 minutes.

    If you “sweat” the cucumbers after slicing, put them in a strainer over a bowl or in the sink, and sprinkle with a light coating of salt let them sit at least 30-60 mins, it removes enough of the water from them that the salad won’t be overly watery the next day.

    I wish that you and other posters would also include the equivalent of dry herbs. I really don’t want to spend five bucks on a fresh herb for 1 tablespoon. (The rest would surely go to waste, I don’t cook frequently- or creatively).

      Hi Laura, I understand your frustration, but dry and fresh herbs do vary in quantity quite a bit as far as flavor goes and since I did not test this recipe with dry herbs I am not comfortable putting an exact amount.

      To sub fresh herbs with dry – A good rule of thumb is 1 tablespoon fresh herbs = 1 teaspoon dried herbs. I like used 1/2 tsp, then you can add more if you like. I used 1/2 tsp for this & I think it is enough. I just made so need to let it marinate a little.

    You can “sweat” the sliced cucumbers ahead of time by sprinkling them with a little salt and letting them rest in the refrigerator for an hour. Drain off the water. This will significantly reduce the amount the salad will will get watery and soft.

    My family has made this for years but has always layered the cucumber slices in a colander and sprinkling the layers lightly with salt as you go. Let sit 30-60 minutes to draw some of the water out of the slices. Use as is or rinse salt off and pat slices dry. This will help with the weeping.

    I love cucumber salad, especially during summer. I made this recipe and liked it but wasn’t blown away so I made it again and swapped the sour cream for Greek yogurt and omitted the optional sugar. That was a game changer for me. I loved it! My mother preferred the sour cream version, lol. Either way it’s cool and refreshing. Perfect for hot weather. As a side note, the Greek yogurt version kept ok in the fridge for about 2 days.

    We paired this with Pulau Indian Spicy Rice and it was a perfect pairing. The coolness of the cucumbers softened the heat of the rice! Delicious 🤤
