Strawberries N’ Cream Stuffed French Toast

Happy Sunday! And you know what that means, beautiful well-deserved brunch! So, this Sunday, the brunch feature is Strawberry French Toast! For me, Sundays are usually for lounging, laughing and loving on my kiddos. So, we really try not to make plans on Sundays and just let the kids enjoy their home playing with their toys, catching up with family on Facetime and even helping us cook in the kitchen!

True, it can be a nightmare having toddlers help you cook. That’s especially true on weekdays when we’re usually on a time constraint to get to school and other obligations. But on Sundays, I can take all the time in the world to help them learn to crack an egg, pour some milk and even dip some french toast in the batter.


As you can image, they absolutely love that! And you can image how much fun they have decorating the french toast with strawberries when they’re done! So, this is what we did this Sunday morning. The kiddos got to dip their toast in the batter, make a splashy mess and enjoy eating that beautiful mess afterwards! Of course, I saved 4 slices for myself to cook the French Toast in my own beautiful mess way for the blog while they were busy devouring their brunch!

Happy Sunday! Lounge a little, laugh a little and love a lot. Because it all starts again on Monday.

This strawberry french toast is a nice twist from traditional french toast because it not only includes fresh strawberries on top, but it also includes strawberry jam and greek yogurt stuffed between two pieces of brioche bread

  • 2 eggs
  • 3 cups milk
  • 1 tsp vanilla extra
  • 1/2 tsp ground cinnamon
  • 1 loaf day-old brioche cut into 1-inch slices (about 12)
  • Coconut oil cooking spray
  • 1/2 cup Greek yogurt
  • 2 tbsp strawberry jam
  • Fresh berries for serving
  • Maple syrup for serving
  1. In a large bowl, whisk together eggs and milk. Add cinnamon and vanilla extract and whisk to combine.
  2. Pour egg mixture into a shallow baking dish, and layer bread slices in the dish to absorb the liquid, about 2-3 minutes. Turn bread slices and let bread absorb liquid on the opposite side, for 2-3 more minutes.
  3. Working in batches, coat the bottom of a medium skillet with coconut oil and heat over medium-high heat. Add 3 to 4 slices of soaked bread and cook until golden brown and crisp.
  4. Turn bread and cook until golden brown and crispy on the other side. Repeat process with remaining slices of french toast.
  5. While cooking the french toast, whip the Greek Yogurt with the strawberry jam until well blended; set aside
  6. When the french toast is complete, spread some of the whipped strawberry "cream" mixture on a side, layer with strawberries, add another layer of the whipped "cream" and top with french toast. Repeat with the remaining toast and "cream".
  7. Cut the stuffed french toast in half diagonally, top with fresh berries and maple syrup and enjoy immediately.
