INGREDIENTS
garlic
mozzarella
parmesan
egg
marinara sauce
onion
eggplant
ricotta cheese
seasonings
STEP 1
slice the eggplant, place on a rack and sprinkle with salt
STEP 2
let sit and then pat off the excess moisture from both sides
STEP 3
soften the garlic and onion with the seasonings
STEP 4
add the marinara sauce and fresh basil and combine
STEP 5
whisk the egg and add the ricotta, parmesan, basil and garlic
STEP 6
stir to combine

spread some of the marinara in the bottom of a baking dish

top with eggplant slices, some overlap is totally fine
STEP 9
top with the ricotta mixture
STEP 10
add the shredded mozzarella
STEP 11
repeat the layers so there are three total layers

bake until golden brown and bubbling
