My Edamame Salad is Soo Good!

I tasted a deli salad once at Whole Foods made with quinoa, edamame, and carrots with a sesame ginger dressing that was soo good. I was immediately obsessed with it and set out to recreate it at home and this is my version. I love that it is made with edamame and quinoa which bring in 9 grams of protein per serving. And I also love that it’s great for meal prepping because it doesn’t get soggy from the dressing. In fact, I think this edamame salad actually gets better as it sits in the dressing!

Edamame Salad Ingredients

Ingredients for recipe: edamame, green onions, lime, shredded carrots, ginger, quinoa, cilantro, oil, water, honey, soy sauce, sesame seeds, olive oil, red pepper, and avocado.
  • Edamame & Salad mix-ins: Edamame, carrots, red bell pepper, green onions, cilantro, avocado. Shelled edamame is easiest to work with, but you can shell your own. Shredded or julienned carrots both work. Add the avocado right before serving so it stays fresh.
  • Quinoa: Quinoa and water. Rinse it well before cooking to remove bitterness. Let it cool completely before mixing so it doesn’t wilt the vegetables.
  • Sesame ginger dressing: Soy sauce, lime juice, olive oil, honey, fresh ginger, toasted sesame oil, sesame seeds. Fresh ginger makes a big difference here. Toasted sesame oil is strong, so a little goes a long way. You can swap maple syrup for honey if needed.
  • For serving: Extra sesame seeds and cilantro. Optional, but nice for texture and freshness.

How to Make Edamame Salad

Step 1: In a small bowl, add the soy sauce, lime juice, olive oil, honey, ginger, sesame seed oil, and sesame seeds.

Step 2: Whisk the edamame salad dressing together.
Rinsed quinoa and water in a pot before cooking.
Step 3: Add the quinoa and water to a medium sauce pan. Bring it to a boil, then reduce the heat to low, cover, and simmer.
After cooking and fluffed with a fork.
Step 4: Cook until the quinoa is fluffy and the liquid is absorbed. Let cool.

Step 5: In a large bowl, combine the cooked quinoa, edamame, carrots, red bell pepper, green onions, and cilantro.
After tossing dressing and salad ingredients together.
Step 6: Pour the sesame ginger dressing over the quinoa salad and toss to combine. Top with cubed avocado, sesame seeds, and more cilantro.

Ingredients
 
 

For the Salad

  • ½ cup quinoa
  • ¾ cups water
  • 1 cup shelled edamame cooked and cooled
  • 1 cup carrots shredded or julienned
  • 1 red bell pepper diced
  • 2 green onions sliced thinly
  • ¼ cup cilantro chopped
  • ½ avocado diced

For the Sesame Ginger Dressing

  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger minced
  • 1 teaspoon toasted sesame seed oil
  • 1 teaspoon sesame seeds plus more for garnish

Instructions

  • Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it cool.
  • In a small bowl, whisk together soy sauce, lime juice, olive oil, honey, ginger, sesame seed oil, and sesame seeds.
  • In a large bowl, combine cooked quinoa, edamame, carrots, red bell pepper, green onions, and cilantro.
  • Pour the sesame ginger dressing over the quinoa salad and toss to combine.
  • Top with sesame seeds, cubed avocado, and extra cilantro if desired.

Notes

  • My Top Tip: Rinse your quinoa before cooking. Quinoa can have a bitter coating, but rinsing helps to remove it!
  • Storage: You can keep your edamame salad in the fridge in an airtight container for up to 4 days! I recommend eating it cold or at room temperature. There’s no need to reheat it.

Recipe Tips

  1. Cook your quinoa in vegetable broth for more flavor. Just swap your ¾ cup of water out for broth! The quinoa will absorb the broth as it cooks.
  2. Add the avocado right before serving. Avocado browns quickly when exposed to air, so if you’re meal-prepping this edamame quinoa salad, I would wait to add it until right before eating!
  3. Taste your dressing before tossing it with the salad. That way, if it needs more soy sauce, lime juice, honey, or sesame oil, you can easily add it!

FAQs

Can I add my quinoa to the vegetables and dressing while it’s still hot?

I wouldn’t recommend it! The hot quinoa could cook the veggies and you want them to be crunchy and fresh.

What do I do if my quinoa didn’t absorb all of the water?

It happens! I would just carefully drain off the remaining water, then use a fork to fluff up the quinoa.
