Viral Ground Beef Bowls!

High-protein recipes are having a moment on social media especially with the growth in popularity of cottage cheese recipes that packs 14 grams of protein per ½ cup. Pair that with naturally high-protein lean ground beef and you have a winning bowl combo.

Ground beef and cottage cheese are the high-protein heroes of this power bowl recipe. For added fiber, good fats and flavor, this bowl is also loaded with roasted sweet potatoes and diced avocados then drizzled with hot honey. It’s colorful, balanced and surprisingly so good! What a combo!

Happy Cooking!

Ground Beef Bowl Ingredients

  • Ground beef: Use lean ground beef, at least 90% fat-free or I prefer even 93% fat-free for this recipe to minimize the saturated fat.
  • Cottage cheese: You can use any cottage cheese you like and it’s a good idea to opt for whole milk because the full-fat version will be more satiating!
  • Sweet potatoes: Use two large ones and chop them small so that you can fit them on a spoon or fork with all the other ingredients. If you’re not a fan of sweet potatoes, you can also use regular potatoes.
  • Avocado: Chop or slice it and add it just before you serve so it stays green and fresh.
  • Hot honey: There are so many great store-bought hot honey options but you can easily just make your own with honey, sriracha or hot sauce and crushed red pepper. Warm up the honey just a little to make it easier to whisk together.
  • Oil: For cooking the sweet potatoes and ground beef. I use olive oil but avocado oil works as well.
  • Seasoning: I’ve seen most people just use a tablespoon of taco seasoning on the ground beef and another tablespoon on the sweet potatoes. I just used a blend though of salt, pepper, garlic powder and paprika.
  • Fresh vegetables: I’ve seen some versions with added fresh veggies like cherry tomatoes, chopped cucumbers or bell peppers. Add up to ½ a cup of any or all of them.
  • Roasted vegetables: While the sweet potatoes are in the oven, you can also throw other vegetables in there as well like roasted broccoli, roasted zucchini or roasted green beans. Add as much as you want and use the same seasoning used for the sweet potatoes.
  • Greens: Sauteed Kale or Sauteed Spinach would be so good in the bowls. Cook them on the same skillet used to cook the ground beef either before or after.
  • Herbs: Top off your ground beef bowls with fresh dill, chopped cilantro or chopped parsley.

Recipe Tips

  1. Assemble before you eat: Because these ground beef bowls have hot and color elements and a hot honey sauce, only put them together when you’re ready to eat.

Recipe Help & FAQs

How do I store and reheat ground beef bowls?

Store each of the parts of the ground beef bowls separately so that you can reheat the ground beef and the sweet potatoes in the oven or in the microwave separately without having to heat the cottage cheese and the avocado. The sweet potatoes and ground beef will last in the fridge for up to 5 days.

Can I freeze ground beef bowls?

Yes, you can free any leftover cooked ground beef or roasted sweet potatoes to assemble these bowls quicker in the future. Thaw overnight in the fridge and then pop in the microwave until heated through.

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Add the sweet potatoes to the prepared baking sheet. Drizzle with olive oil and season with ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon paprika, and ½ teaspoon garlic powder. Toss the sweet potatoes and arrange in a single layer. Roast for 30-40 minutes, flipping halfway through, until the sweet potatoes are knife tender.
  • Meanwhile, heat the remaining olive oil in a non-stick skillet over medium heat. Add the ground beef, remaining ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon paprika, and ½ teaspoon garlic powder. Use a spatula or wooden spoon to break up the beef while stirring occasionally, until the beef is browned all over, about 10 more minutes.
  • In a small bowl, heat the honey for 10 seconds in the microwave. Add the sriracha and crushed red pepper and whisk to combine.
  • Assemble four ground beef bowls by dividing the sweet potatoes, ground beef, cottage cheese and avocado. Drizzle with the hot honey and enjoy immediately.
