Frankenguac is a cute way to serve guacamole during Halloween. It takes only 15 minutes to make with simple pantry items; there's no need for fancy crafts!

Halloween is a great excuse to play around with food, and this Frankenguac is always a hit. It’s just my go-to guac recipe, but with a fun Frankenstein makeover, that’s way easier than it looks. A couple of olive slices for the eyes, a few sour cream circles, and some tortilla chip “hair,” and suddenly, your guac is ready for the Halloween party.

What I love about this Frankenguac is that it doesn’t take any fancy ingredients or extra time. It’s the same guacamole we all know and love, just with a little Halloween attitude. Ingredients You’ll Need for Your Frankenguac

  • Avocados: Use ripe avocados for a creamy texture. When making guac, you really want to avoid any microwave or oven “instant” ripening hacks. Even though they will work to make the avocado soft, they do not have the same flavor as a ripe avocado.
  • Lime Juice: Fresh lime juice brightens up the guac and keeps it from browning. If you’re out of limes, lemon juice works, though the flavor will be a bit different.
  • Kosher Salt: You can use sea salt or regular table salt; just start with a smaller amount, as they’re more concentrated.
  • Cumin: Adds a warm, slightly smoky flavor. If you’re not a fan of cumin, feel free to skip it or swap it with a dash of smoked paprika or chili powder.
  • Onions: Red onions work well for a milder taste, but yellow or white onions are great too. If you prefer a more subtle flavor, soak the chopped onion in cold water for a few minutes before adding.
  • Cilantro: Fresh cilantro gives that classic guac taste, but if you’re not a fan, just leave it out or replace it with fresh parsley for a milder herb flavor.
  • Garlic: Just one clove adds a hint of sharpness. You can substitute it with a sprinkle of garlic powder if needed, or skip it altogether if you prefer a milder taste.
  • Tortilla Chips, Sour Cream, Black Beans and/or Black Olives (for Decorating): These add the “Frankenstein” look!
  • Jalapeños: For a little kick, finely chop some jalapeños and mix them in.
  • Tomatoes: Diced Roma tomatoes work best since they’re less watery.
  • Sour Cream: For extra creaminess, stir a spoonful of sour cream directly in with the guac.
  • Chili Powder or Smoked Paprika: Either of these adds a smoky layer that works well with the cumin. Use sparingly to avoid overpowering the dip.
  • Cheese: A little cotija or feta crumbled in can give your Frankenstein a pimply problem.

Start by making your favorite guacamole. Or you can use my simple guacamole recipe below. Mash 3 ripe avocados. Add onions, garlic, cilantro, red onions, cumin, salt and pepper. Mix and combine.

Now that you have the guacamole recipe done, you can shape the Frankeguac. Spoon the guacamole into a square or rectangle shape on a flat surface that you’ll use to serve it for Halloween. Use a spatula and paper towel to form the shape, but don’t worry if it’s not perfect.

Creating Your Frankenstein Dip

Once you form the shape of his Halloween guacamole, you can start to decorate. Below is a list of what I used and substitutions I would recommend.

  • For the eyeballs, use sour cream. You can also use Greek yogurt, small white cheese cut into circles, or sliced cucumbers.
  • Use black beans for the eye pupils. You can also use olives.
  • Use kalamata olives for the scars, nose and the ears. The trick is to use a small sharp knife and slice them into super thin and long pieces. I actually used Moroccan olives that were very large and wrinkly. You can also pipe refried beans from a small hole in a plastic bag to draw on the scars on Frankenguac.
  • Use blue corn tortilla chips for the hair. You can also use spinach tortilla chips or pita chips.

Tips for Making Guacamole

  1. Pick Ripe Avocados: The perfect avocado feels slightly soft when you press it, but not mushy. If you need to sped up ripening put it in a paper bag with an apple or banana for 1-2 days.
  2. Mash to Your Liking: If you like chunkier guacamole, use a fork to mash the avocados just until they’re slightly broken down. For a smoother guac, try mashing a bit more until creamy.
  3. Add Ingredients Gradually: Seasonings like salt and lime juice can be adjusted after tasting. Start small, then add more to reach your perfect balance of flavors.
  4. Let it Rest (If You Can): If you have a few extra minutes, let your guac sit for about 10 minutes before serving. This lets the flavors mix together.
  5. Prevent Browning: If you’re not serving it right away, place a layer of plastic wrap directly on top of the guac to keep out air and prevent browning. Another trick is to add a sprinkle of lime juice on top before covering.
  6. Serve Fresh: Guac is best enjoyed fresh, so try to make it close to serving time. Leftovers are fine but may darken slightly in the fridge.

  • 3 avocados halved and peeled
  • 2 tablespoon lime juice
  • ¼ teaspoon Kosher salt
  • ½ teaspoon cumin
  • ¼ cup onions finely chopped
  • 3 tablespoons cilantro chopped
  • 1 garlic clove minced

Instructions

  • Place avocado and lime juice in a large bowl and mash together with the back of a fork. Season with salt and cumin and continue to mash together. Fold in the onions, cilantro and garlic.
  • Spread guacamole into rectangular shape and decorate with tortilla chips, sour cream and olives.

Preparation: For best results, use very ripe avocados which tend to give in a little when squeezed
Storage: Since avocado are sensitive, it’s best to eat the guacamole right after making it. If you’d like to store it in the fridge, cover it with a piece of plastic wrap pressed on top of the guacamole so it is touching it. This usually prevents it from browning. If some browning does occur, just scrape the browned layer off and serve. It’s best to decorate immediately before serving though.
