Ingredients & substitutions

  • Coconut oil: Coconut oil helps to bind the ingredients together and add moisture, and it also adds a nice subtle flavor. You can substitute with unsalted butter or plant-based butter.
  • Sugar: Cane sugar is less processed than white sugar so it is preferred in this recipe, but you can substitute with any granulated sugar.
  • Egg: To bind the dry ingredients together. You can make this recipe vegan by using a flax egg.
  • Flours: Use a mixture of oat and all purpose flour to make these strawberry bars. If you have a gluten intolerance, you can swap the all-purpose flour for a 1:1 gluten-free flour. If you don’t have oat flour to hand, it’s quick and easy to make your own.
  • Cinnamon and salt: To enhance the flavor of the bars.
  • Strawberries: We use fresh strawberries for these bars, dice them fairly small so that they break down easily when they are baked. It’s best to avoid frozen strawberries as these can contain a lot of water.
  • Lemon juice: To help balance out the sweetness. Use fresh lemon juice rather than bottled for the best flavor.
  • Oats: Rolled oats, or old fashioned oats are best for this recipe, they keep a nice chewy texture and get nice and crispy too. In a pinch you can use quick oats, but it’s best to avoid steel cut oats that will be tough to eat.

How to make strawberry oat bars

Prepare the layers

  1. Blend together the wet ingredients and add the flours, salt and cinnamon.
  2. Mix well until combined.
  3. Dice the strawberries and add to a bowl.
  4. Toss in the sugar and lemon juice.
  5. In another bowl, mix together the flours, coconut oil, sugar and salt.
  6. Mix in the rolled oats with your fingers.

Assemble & Bake

  1. Press the base layer into a lined pan and smooth it out.
  2. Add the strawberries on top in an even layer.
  3. Sprinkle over the oat crumble topping.
  4. Bake until golden brown.

Tips for making the bars

  1. Use juicy ripe strawberries. This will help them break down more easily with the sugar and lemon juice to create a jammy consistency when baked
  2. Chop the strawberries evenly. This will help make the filling more smooth and consistent instead of chunky. It also breaks down with the sugar more easily.
  3. Divide the base into portions to make it easier to add to the pan. Put several large dollops of the mixture in different parts of the pan and push them together with your fingertips.
  4. Don’t skip chilling the base layer. This will help the oat bars cook more evenly as the coconut oil will solidify so that the sugar can gradually absorb any liquid.

Frequently asked questions

How long do they keep?

Once your strawberry oat bars are baked, let them cool before cutting them in bars. Store them in an airtight container in the fridge for up to 4 days. They will not be as crisp after a couple of days, but can be reheated in the oven to get them to crisp up again if you wish.

Can you freeze them?

Yes, these bars will keep frozen well for up to 2 to 3 months. Once cooled, you can freeze the bars in the pan by covering with foil and placing in a freezer bag. You can also freeze individual bars by separating them with parchment and placing in an airtight container. Thaw in the fridge or at room temperature.

Can you use other fruits?

If strawberries aren’t your thing, or you have some fresh fruits to use up, the strawberries can easily be swapped. Blueberries, raspberries, peaches and mango are all great choices!

Base

Filling

  • 1 pound strawberries small diced
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice

Crumble

Instructions

Make base

  • Preheat oven to 350°F. Line an 8” x 8” baking pan with parchment paper.
  • In a large bowl, blend coconut oil, sugar, and egg together with a stand mixer or handheld beaters on medium high until combined.
  • Add all-purpose flour, oat flour, cinnamon and salt, blending on low until just combined.
  • Press mixture into prepared pan. Pat into an even layer. Chill in fridge for at least 20 minutes while preparing remaining layers.

Make filling

  • Toss the diced strawberries with sugar and lemon juice. Set aside.

Make crumble topping

  • In a large bowl, combine the flours, coconut oil, sugar and salt.
  • Add the rolled oats and toss with your fingers until well mixed and crumbly.

Assemble

  • On the chilled base, spread an even layer of the strawberry mixture.
  • Sprinkle the crumble on top of the strawberries as evenly as possible, but do not press down.
  • Bake for 45-50 minutes, or until golden on top and strawberries are slightly bubbling at edges.
  • Cool in pan for at least 20 minutes before removing. Allow to cool completely before slicing into 9 squares.

Notes

Storage: Store the oat bars in an airtight container in the fridge for up to 4 days. It will not be as crisp but can be reheated in the oven to make more crisp.

Ads made it impossible to read the recipe, which kept jumping around and was entirely covered by a big white square that I guess was supposed to be an ad. I ended up throwing out a bowl of sugar coconut oil and egg. I spent 4 minutes trying to find the rating box to write this review.

    It’s delicious and everything worked out perfectly, including letting it cool and cutting it into squares that stick together. That was my greatest fear, that it would fall apart and be a mess. It didn’t!

    In making this recipe, I have found cooking tools I didn’t know I had! Like a portable hand-mixer with three different sets of blades… Who knew?!
    Made oat flour from old fashion oats and learned that a half a cup of oats equals a half a cup of oat flour & 2 cups of whole strawberries is pretty close to 16 ounces chopped.

I didn’t love how sour the baked strawberries came out (I blame the batch of strawberries), but my roommate tried and loved it so I’m still really happy with it (plus I love Yumna). Nevertheless, it still came out really well when I substituted the coconut oil with vegetable oil. I even added some of the oatmeal flour to the crumble which made it less messy!     1. Hi! I’ve attempted this gorgeous recipe. The crumble on the top though is very loose and crumbly so after 45mins in the oven, it’s still a very loose crumble. Didn’t set. Had to check the ingredients for the crumble again but I haven’t missed anything. What happened? Still in the oven so haven’t yet tasted it (can’t wait to be honest) haha

  40. I followed the recipe and substituted plant based butter for coconut oil. The crumble seemed like A LOT for the pan size. I baked it and it didn’t set at all 🙁 if I were to cut them the topping would all fall off what am I doing wrong

    1. Hi Sam – I’ve never tested these with plant based butter before and it was not one of my list of substitutions. Some don’t hold well unfortunately and that would need to be tested. Did you also replace the egg in the recipe to make it plant-based? That might have a problem with them not holding together.

Made these bars today – amazing bars and meal prep for my breakfast this week- made a few changes- replaced the all purpose flour with almond flour, swapped the egg with unsweetened applesauce, replaced the caster sugar with palm sugar and tossed the strawberries with honey and lemon juice. Still tasted amazing and totally gluten free and vegan 😋thank you for the recipe

I wanted to do it really well so I ran to the store to get a square pan, ended up getting a silicone one so I wouldn’t have to use the paper.
