When it comes to easy appetizers, I don’t think anything beats a baked brie charcuterie board. The brie gets baked until it’s all warm and gooey, and I like to drizzle it with honey and sprinkle on some fresh herbs. Pair that with crisp apples, walnuts, pistachios, grapes, and plenty of crackers and toast, and you’ve got a super quick app that keeps people double-dipping.

Baked brie is always a hit with my family and friends. What I love most, though, is how easy it is to pull together. It looks like something you’d see on Pinterest, but really, it’s just about piling up your favorite snacks around a literal baked cheese round. And if you’re anything like me, you’ll catch yourself sneaking bites while assembling it (in fact, I highly recommend it!).

9 Ingredients to Throw Together A Baked Bried Appetizer
- Brie: Triple cream brie, trust me here, not all brie is made with triple cream, so look for that distinction when shopping. If you are in a bind and can’t find brie, you could swap it for camembert or even a wheel of goat cheese. Just go for something soft and creamy that bakes well and melts.
- Honey: Honey adds a little sweetness. If you’re out, maple syrup or agave can work in a pinch. Or skip it and drizzle balsamic glaze.
- Fresh Thyme or Rosemary: If you don’t have thyme or rosemary, you can use sage or even skip the herbs altogether—it’s still delicious.
- Baguette: A sliced and toasted baguette is perfect for scooping up all that melted cheese. No baguette? Use any crusty bread, Melba toast, or even homemade pita chips. If you need a gluten-free option, any GF bread will work.
- Crackers: Crackers give you a little extra crunch on the board. Use whatever you like—water crackers, whole grain, or even pretzel chips. Gluten-free crackers are a great option, too.
- Apple: Use whatever you have—Granny Smith, Fuji, or even pears work if you’re out of apples.
- Grapes: Red or green, whatever you have on hand works. If you don’t have them, swap them for dried fruit like cranberries or apricots.
- Pistachios: Pistachios are my thing, but you can use almonds, pecans, or even sunflower seeds if you’re keeping it nut-free.
- Walnuts: If you’re not a walnut fan, just swap them for your favorite nut or leave them off altogether and add more crackers or fruit.
Variations of Toppings to Try on Baked Brie
One of the reasons I turn to baked brie is because of how versatile it is—I can change the toppings to match whatever dinner I am making flavor-wise! Some combos I’ve tried before.
Fig and Walnut
- 2-3 tablespoons of fig jam
- 2 tablespoons of chopped walnuts
Spread the fig jam over the brie before baking, then sprinkle the walnuts on top when it’s out of the oven (if you bake with the walnuts, the walnuts will burn). If you’ve got a little fresh thyme, toss some on there too!
Honey and Pecan
- 2-3 tablespoons of honey
- 2 tablespoons of chopped pecans
Bake the brie, drizzle the honey over it, and sprinkle with pecans. If you want to add some oomph, add a tiny pinch of cinnamon or cayenne.
Cranberry and Pistachio
- 2 tablespoons of cranberry sauce
- 2 tablespoons of chopped pistachios
If you’re making this for the holidays, cranberry and pistachio is the way to go. Spread the cranberry sauce on the brie before baking, then sprinkle the pistachios on top once it’s done. If you’re a fan of the pistachio and cranberry combo, you’ve got to try my white chocolate bark recipe, too!
Garlic and Herb
- 1 roasted garlic bulb, mashed
- 1 teaspoon of chopped fresh thyme or rosemary
This savory version is a great break from the usual sweet toppings. Spread the roasted garlic on the brie before baking, and sprinkle with fresh herbs when it comes out.
Berry and Almond
- 2 tablespoons of berry preserves (any flavor)
- 2 tablespoons of sliced almonds
Spread the berry preserves on the brie before baking, then sprinkle the almonds on top when it’s done. The almonds add a little crunch that pairs so well with the creamy cheese.
How to Make Baked Brie
Tips for Making the Best Baked Brie with Honey
- Use a good quality brie for this recipe. I tend to use a triple cream brie! It’s so amazingly creamy and is not much pricier than the double cream brie.
- Don’t remove the rind. This is what keeps the cheese together, and it’s totally edible!
- Use parchment to line your baking sheet for easy removal. This is also a great tip, just in case any cheese does ooze out!
- Allow the baked brie to rest before transferring it to the cheese board. Allowing it to rest for 5 minutes gives the brie a chance to firm up slightly, so it’s actually easier to move.
Frequently Asked Questions
You can store leftover brie in the fridge in an airtight container for a couple of days. Gently reheat the brie in a 300°F oven for about 5 minutes, or until it’s soft again. Microwaving can work in a pinch, but it tends to overcook the edges, so use low power and short intervals if you go that route.
This happens if the rind cracks while baking, letting the cheese ooze out before you’re ready to serve. To avoid this, bake the brie on parchment paper or in a small, rimmed dish that can catch any runaway cheese. If you notice the rind looking fragile before baking, you can gently wrap it in puff pastry or phyllo dough for extra protection (and bonus points for a delicious crust).
The brie is ready when it feels soft to the touch but still holds its shape. You can test it by giving it a gentle poke with a spoon or pressing lightly on the top—it should feel squishy but not collapsed. If you’re unsure, take it out early and let it rest for a minute; it’ll keep softening as it sits.
Technically, yes, but it’s messy. The rind acts like a natural container, keeping the cheese together while it bakes. If you really don’t like the rind, you can scoop out the inside after it’s baked. Or, bake the brie in a ramekin or small oven-safe dish to avoid cheese going everywhere.
