Place brie on a plate or pan, and set in freezer until very firm, about 30 minutes.
Preheat oven to 350°F, place parchment paper on a small baking sheet
Place brie on the prepared baking sheet. Bake until cheese is melted, about 15–20 minutes. Remove from oven and let rest to firm up slightly, about 5 minutes
Use a spatula to carefully place brie onto a cheese board. Place the pomegranates on top, then sprinkle the pistachios and thyme. Drizzle with honey.
Serve warm with toasted bread, crackers, fruits and nuts.

Storage: Store any leftovers in an airtight container. The cheese will last for two to four days in the fridge, and you can eat cold or reheat in the microwave or oven.Sourcing: You can find brie in all major grocery stories, usually in the deli area with the selection of fancy cheeses. Triple cream brie may be harder to find, but it's still widely available in the U.S.
