watermelon pizza is fun to make!

I love a good fruit pizza, but once summer hits, this watermelon pizza is the one I’m making. It’s easy, it looks fun, and my kids will eat it without complaining so that’s a win. I usually pull a watermelon pizza out when we have people over or if I’ve got fruit to use up that isn’t getting eaten fast enough.

The ricotta, whipped cream cheese, and honey combo is mellow and creamy, kind of like a shortcut fruit dip. You just spread it on a thick watermelon slice and pile on whatever fruit you’ve got. I’ve used strawberries, blueberries, kiwi, and whatever else is in the fridge.

Watermelon Pizza Ingredients

Ingredients for recipe: whole watermelon, strawberries, ricotta, whipped cream cheese, blueberries, whole kiwis, and honey.
  • Watermelon: A large seedless watermelon is best for this recipe, but you can always use a personal size or mini watermelon if that’s all you have on hand.
  • Cream cheese: I use full-fat whipped cream cheese, but you can use light or even fat-free. And if you’re not a cream cheese fan, try swapping for whipped cottage cheese or Greek yogurt.
  • Ricotta cheese: Whole milk ricotta is best, but you could use part skim if you like!
  • Honey: I like using honey to sweeten the whipped cream cheese and ricotta icing, but agave or maple syrup will also do (avoid granulated sweeteners).
  • Fruit Topping: Kiwi, blueberries, and strawberries are my favorite toppings for this watermelon pizza, but use any fruit you like. Sliced peaches, bananas, raspberries, or mango pieces will also be delicious.

How to Make Watermelon Pizza

Cut The Watermelon

Cut watermelon in half.
Step 1: To start, get a large juicy watermelon, and cut it in half.
Slice off watermelon round.
Step 2: Then cut an even round slice about 1-inch thick. Use the rest of the watermelon as you wish. You’ll only need this round slice.

Build The Watermelon Pizza

Whisk ricotta mixture in bowl.
Step 1: To make the topping, it’s a simple mixture of ricotta cheese, whipped cream cheese, and honey.
Spread ricotta mixture on watermelon.
Step 2: Add the mixture right on top of the round slice of watermelon.
Slice watermelon pizza.
Step 3: Slice the watermelon pizza into 8 equal slices.
Add one of the fruits.
Step 4: Add fresh fruit on top.

Ingredients
  

  • 1 large watermelon slice about 1 inch thick,cut from the center of the melon
  • ½ cup ricotta cheese
  • ¼ cup cream cheese whipped
  • 1 tablespoon honey
  • Strawberries sliced, for topping
  • Blueberries for topping
  • Kiwi sliced, for topping
  • Fresh mint for garnish
  • 1 tablespoon shredded coconut for topping

Instructions

  • In a small bowl, mix the ricotta, cream cheese and honey together until combined.
  • Spread the ricotta mixture over the watermelon and cut into 8 equal slices.
  • Top the slices of watermelon with strawberries, blueberries, kiwi and mint. Sprinkle the shredded coconut and serve immediately.

Notes

  • For best results, top the watermelon with ther ricotta mixture immediately before consuming. And enjoy within a few hours.
  • To make this vegan, you can mix coconut cream with shredded coconut as the base “sauce” and then add any toppings of choice.
Storage: Watermelon pizza is best served immediately, but if you have leftovers, store them in the fridge for about 12-24 hours. After that, the watermelon will start to weep moisture, and the icing will start to slide off.

  1. Cut your watermelon properly. Feel free to check out my tips on how to cut a watermelon. You only need the middle section of the watermelon, but the tutorial will help you cut it properly and then slice the remaining halves for snacking later.
  2. Don’t add too many toppings. It can get messy if you’re loading toppings on top of each other, so keep them thinly sliced and make sure to stick each one directly to the ricotta mixture.
  3. Use a large, seedless watermelon. It’s easier to work with, and you don’t have to worry about seeds getting in the way!

    I made this watermelon pizza for my prayer group social we had on Saturday. It was a hit, everyone not only liked the look of the pizza, but the taste as well. Not a slice of the two pizzas I made was left. For the icing, I only used cream cheese (mixed berry whipped cream cheese, sweet enough for us). My husband’s family came over on the Sunday and I made it for them. It was a hit there too. One said that it will be his new way to eat watermelon.
