- 2 ripe bananas
- 2 cups rolled oats
- 2 tablespoons chia seeds
- 2 cups almond milk

- Preheat oven to 350°F. Lightly coat an 8×11 baking dish with nonstick cooking spray.

This was “so good”!!!!
Didn’t have any berries, so I topped with banana slices instead. Mixed in maybe a tablespoon of brown sugar a splash of vanilla, and a bunch of extra cinnamon. It had a nice “fall” flavor!

I thought you had a video where you added Greek yogurt to this recipe? I cannot find it. How much Greek yogurt did you add and at what point? Did you adjust the milk amount?
It was a bit lemony and took almost twice as long to bake for me. I wish I had added more oats and a touch of vanilla to calm down the lemon. It was still good but I would make a few adjustments before making again.

Can this be put together the night before and stored in the fridge and then pulled out and baked in the morning? Or will that mess with the Chia seeds since they’ll be bloomed?
I would bake the same night and just reheat in the morning. I don’t think you’ll have enough moisture with the chia seeds and the oats sucking it up in the fridge.

So I made this oatmeal recipe. I used one-min oats so it stayed 35 min. in the oven to get a good consistency. I added walnuts and served w more milk, a spoonful of peanut butter and a few dark choc chips. It was so good! 😋😋😋 That was dinner for me bec I couldn’t wait for the morning!

The banana provides moisture and sweetness to the oatmeal, but if you don’t have any on hand/ don’t enjoy them/ have a food sensitivity, you can leave them out. The recipe will just be a little less sweet without them.
I think you could use applesauce. You’d have to experiment with the quantity to ensure it’s not too soupy.

Sorry, the recipe isn’t very clear. The video on youtube shorts indcated greek yoghurt and peanut butter in the recipe. When do you add them?

The chia seeds from the generic nutrition calculator have a very small amount of trans fat in it, so it rounded it up to 1 gram of trans fat in this recipe.

Yes, you can! I haven’t tried that yet, but you might need to add some more milk, so it doesn’t turn out to dry.

Just made this.. didn’t have mixed berries so I added more bananas and strawberries and it’s soo good as you say…! I probably could have left it in the oven a couple minutes more but I just left it to cool and it slightly thickened into yumminess!!
