My Date Snickers are So Good!

You all know how much I love dates and nuts. I grab a handful of nuts and one date daily as a midday snack and it gives me the best boost of energy. Then I’m not sure how this became about but I started hearing about something called “Date Snickers” on TikTok – basically it was taking peanut butter, dates, chocolate and seat salt and putting them together in a way that basically tasted like a Snickers bar. I tried them and I was obsessed!!

So this has now become a project that my daughter takes on once or twice a month and we all go crazy for them. I can’t describe what it is but they really taste like a Snickers bar but made with more good-for-you ingredients. They only need 4 ingredients and they’re super easy to make. Just split open the dates and stuff them with creamy peanut butter and crunchy chopped nuts. They’re sweet, salty, crunchy and chocolatey – just the best combo ever!

Ingredients You’ll Need

Ingredients for recipe: peanuts, peanut butter, dark chocolate bar pieces, and dates.
  • Dates: Use large soft, fresh dates. Medjool dates are some of the best for stuffing because of their large size, and natural caramel-like flavor. If you don’t want to bother removing the pits, you can buy them pitted already.
  • Peanut butter: I use smooth peanut butter, but you could use crunchy peanut butter or any other nut butter like almond butter, cashew butter, or sunflower.
  • Peanuts: I use unsalted roasted peanuts and chopped them small so they can fit inside the dates but you can use any other nuts like like almonds, walnuts, pecans or cashews.
  • Dark chocolate: I use a chocolate bar with least 60% cacao for coating treats. It’s smooth, not too sweet, and sets quickly. You can use any other chocolate bar or chocolate chips though.
  • Flaky salt. Instead of, or in addition to the chopped nuts on the outside of the date snickers, sprinkle a small pinch of large flaky salt.
  • Shredded coconut. Make your date bars even chewier with unsweetened shredded coconut stuffed inside the dates. You can replace some or all of the peanut butter amount.
  • Cream cheese or mascarpone. Use just a teaspoon of it stuffed inside the dates and it will give it a chocolate cheesecake twist.
  • Crushed freeze-dried raspberries or strawberries. Instead of adding the crushed nuts on top of the date snickers, try crushed freeze dried fruit, for some peanut butter jelly vibes.
  • Espresso powder or cinnamon in the chocolate. Each date would only require a pinch of either one of these to really make the chocolate taste more rich.

How to Make Date Snickers

First make the chocolate coat, then stuff, dip in the chocolate and let them set.

Make the Chocolate Coating

Step 1: Place the chocolate in a microwave-safe bowl and microwave in intervals, stirring the chocolate until melted.

Step 2: Set aside and reheat as needed to keep the chocolate melted while coating your treats.

Stuff the Dates

Step 3: Use a knife to slit each date lengthwise and remove the pits.

Step 4: Fill each date with peanut butter. You can use a spoon or add the peanut butter to a zip-top bag, cut off the tip, and use it like a piping bag to fill the dates.
Add crushed peanuts into stuffed date.
Step 5: Add some crushed nuts to each stuffed date.

Step 6: Place a toothpick inside each one, leaving enough to hold on to and keep the date sturdy while dipping.

Step 8: Use a spoon to pour more chocolate over the date to thoroughly coat them and allow the excess to drip back into the bowl.

Set the Date Snickers

Step 9: After coating in chocolate, transfer the nut-filled dates to a tray lined with parchment paper and top with remaining chopped nuts.

Step 10: Transfer the tray to the fridge and allow them to set.

My Best Date Snickers Tips

  1. Use high-quality dates. Dates are the main ingredient in date Snickers, so look for fresh, plump dates that are still slightly soft, like medjool.
  2. Add coconut oil to the chocolate: Coconut oil adds many benefits to melted chocolate: it makes melted chocolate more smooth and thinner for dipping; it gives the chocolate a really shiny coating so it doesn’t look as dull; and it helps the chocolate harden faster.
  3. Chill before coating with chocolate. This step isn’t necessary, but it makes dipping the stuffed dates in chocolate easier by firming up the ingredients beforehand.
  4. Let them set up in the fridge. After coating them, pop the tray of stuffed dates in the fridge for about 10 minutes. This will help the chocolate set quicker. Remember to sprinkle the tops with additional nuts before this step, so they stick to the chocolate.

Recipe Help & FAQs

How do I store the date snickers?

Store leftover date snickers in an airtight container or bag in fridge for up to one month. As long as the chocolate is hardened, nothing will stick and you can pile them on top of each other.

Can I freeze chocolate-covered stuffed dates?

Yes, you can! To freeze them, place a single layer on a parchment-lined baking sheet and put them in the freezer until firm. Once they’re frozen, transfer them to an airtight container or a freezer-safe ziplock bag and they will last 6 months in the freezer.
To thaw them, remove the number of dates from the freezer and transfer them to the fridge to thaw overnight. You can also let them sit at room temperature for a few minutes until they are soft enough to eat.

What’s the best chocolate bar to use to coat them?

I love using Lindt and Ghiradelli dark chocolate, but any chocolate bar with at least 60% cacao is good. Some people like to use melting chocolate wafers or chocolate chips, too.

  • 12 medjool dates
  • ¼ cup peanut butter divided
  • ¼ cup chopped roasted peanuts divided
  • 4 ounces dark chocolate bar cut into chunks

Instructions

  • Use a small sharp knife to cut a slit in each date lengthwise. Remove the pits.
  • Fill each date with 1 teaspoon peanut butter and add 1 teaspoon of crushed peanuts on top. Set aside.
  • Place the chocolate in a microwave-safe bowl. Place the bowl in the microwave at 30 second intervals. Stir the chocolate in between each 30 seconds until all the chocolate is melted.
  • Place a toothpick inside each stuffed date and dip the date in the melted chocolate. Use a spoon to coat the date completely in the chocolate, then allow any excess chocolate to drip off.
  • Transfer the chocolate covered date to a tray or plate lined with parchment. Sprinkle the top with the remaining crushed peanuts.
  • Place the dates in the fridge to allow the chocolate to set, about 10 minutes.

Notes

Storage: Store the stuffed dates in the fridge for up to one month off freeze for up to 6 months.

      Oh good question! It’s hard to know because my family never lets them last more than a couple days LOL. But they can definitely last one month in the fridge because there’s nothing sensitive that would affect it.

    OMG these are sooooo good, I made these in my lunch break and also used freeze-dried raspberries on some of them.

    These are amazing and my 11 year old loves them and asks for them all the time. The only thing I did different was use chunky peanut butter to stuff the dates with just made it easier then stuffing with peanut butter then adding nuts. I also use dark chocolate sugar free chips for the coating and they are amazing.
