  • To make the streusel, line a quarter baking sheet with parchment paper. In a small bowl, whisk together flour, sugar and cinnamon until combined.   • Preheat oven to 350°F. Grease an 8 x 8 metal baking pan and line with parchment paper, letting the paper overhang the edges for easy removal.
  • In a large bowl, whisk together flour, cinnamon, baking powder, baking soda and salt.
  • In another large bowl, stir together oil and the sugars. Whisk in the eggs until combined, then stir in the yogurt and vanilla.
  • Using a rubber spatula, fold the dry ingredients into the wet ingredients just until combined. Pour into prepared pan and sprinkle evenly with chilled streusel.
  • Bake for 45-55 minutes, or until the top is light golden brown, the center is firm when lightly touched, and a toothpick inserted in the center comes out clean.

    I decided to make this recipe yesterday after having a craving for sweet food, and the last time I tried to make a Greek Yogurt recipe was the Greek Yogurt Brownies during the holidays (if you haven’t tried that yet – the recipe is divine! https://feelgoodfoodie.net/recipe/greek-yogurt-brownies/).

    I absolutely love cinnamon and spice, so thought I’d try my hand at this. I generally don’t have white flour at home, so I ended up substituting white flour for King Arthur’s Whole Wheat Flour, and the recipe still came out amazing. I am also a BIG fan of spice, so for the streusel, I ended up doing 2 teaspoons of cinnamon and a half a teaspoon of nutmeg. For the cake, I did 2 teaspoons of vanilla extract and 2 1/2 teaspoons of cinnamon, and another half a teaspoon of nutmeg.

    All in all – it came out absolutely delicious, and I am a HUGE fan! I had all of the ingredients already at home, and was super excited to be able to make this.

    This will definitely be a repeat dessert recipe for me – of course, in addition to the Greek Yogurt Brownies, too! 🙂
