Tired of takeout or wondering what to do with leftover rice? This easy Shrimp Fried Rice recipe can be made at home and is healthier thanks to lots of fresh veggies.

INGREDIENTS

what you'll need

▢ olive oil ▢ uncooked shrimp  ▢ scallions  ▢ garlic ▢ ginger root ▢ brown rice ▢ eggs ▢ carrots ▢ frozen peas ▢ salt and pepper ▢ soy sauce ▢ toasted sesame oil ▢ crushed red pepper

STEP 1

the shrimp dry with a paper towel and season with a little salt.

STEP 2

a skillet and add oil. Then add shrimp and cook until pink about 2 minutes a side. Remove from pan.

STEP 3

a little more oil and saute the green onions, garlic and ginger until soft... it will smell amazing!

STEP 4

in the rice and add the eggs stirring until the eggs are cooked, about 3 minutes. So fast!

toss

STEP 5

the veggies to the pan along with the soy sauce and sesame oil.

STEP 6

bring it all together by tossing in the shrimp! Season with some black pepper and extra soy sauce.

Sprinkle on some more scallions and curl up on the couch with the best homemade shrimp fried rice!
