why you’ll love this Easy Baked OatMeal Recipe

  • Cleanup is as simple as 1-2-3! All you need to make this recipe is a single baking dish, a fork, and wet and dry measuring cups.
  • This baked oatmeal recipe is perfect for busy mornings. You can have it prepped and in the oven within minutes!
  • It’s a great way to use up overripe bananas.

Ingredients to make One Pan Oven Baked Oatmeal

  • Bananas: The natural sweetness of the bananas takes the place of refined sugar. You’ll want to make sure your bananas are ripe for this recipe.
  • Rolled Oats: These are the traditional oats that you’ll find in most oatmeal recipes. They’re a great source of fiber, and protein.
  • Chia Seeds: These tiny seeds are high in omega- fatty acids, calcium, and magnesium. They add a nice crunch and nutty flavor to the oatmeal.
  • Milk: You can use any type of milk you like in this recipe – cow’s milk, almond milk, soy milk, etc.
  • Frozen Berries: These add sweetness and antioxidants to the oatmeal. You can use any type of frozen or fresh fruits you like in this recipe.
  • Cinnamon: A sprinkle of cinnamon is a great way to add flavor and warmth to your oatmeal.
  • Lemon Zest: This optional ingredient adds a nice tart flavor to the oatmeal.

Tips for making Baked OatMeal With Bananas

  1. Spray the baking dish. Because you’re starting with the mashed bananas in the baking dish, it’s important to spray the baking dish before adding any ingredients to ensure that nothing sticks to the dish for easier cleanup.
  2. Make it quickly in the microwave. If you don’t have time to wait for it to bake in the oven, you can also make this recipe in the microwave. Just cook it on high for about two-three minutes.
  3. Use Overripe Bananas. The riper the banana, the sweeter it will be. So if you have some bananas that are starting to brown, this is a great recipe to use them in.
  4. Double the recipe for the perfect brunch dish. This recipe can easily be doubled if you’re feeding a larger crowd. Just use a bigger baking dish and cook it for a little longer.
  • Switch out the chia seeds. If you’re not a fan of whole chia seeds, you can try ground chia seeds that might be easier for your to absorb or ground flaxseed. You can also just leave it out.
  • Make with Oath Overnight OatsThis is a brand I launched to create convenient packages of my oatmeal recipes. Try replacing the rolled oats in this recipe with equal parts of the Almond Butter & Jelly mix!
  • Use any fresh of frozen fruit. The convenience of the frozen berries in this one pan oatmeal is great for a quick dump and bake situation. However, you can use any other fresh fruit you enjoy with oatmeal.
  • Add some spices. If you’re looking to change up the flavor profile of this recipe, try adding some ground ginger, nutmeg, or cloves.
  • Add some crunch. If you’re looking for a little more texture in your oatmeal, you can add some some nuts to the recipe.
  • Use water instead of milk. If you don’t have any milk on hand, you can easily swap it with water. The recipe will still be delicious!

To reheat, you can either microwave it for a couple of minutes or warm it up in the oven.

Frequently asked questions

Can I use quick oats instead of rolled oats for this recipe?

I do not recommend using quick oats in this recipe because they will cook too quickly and will not have the same texture as rolled oats.

Can I make this baked oatmeal recipe without bananas?

Absolutely! The banana provides moisture and sweetness to the oatmeal, but if you don’t have any on hand or don’t enjoy them, you can leave them out. The recipe will just be a little less sweet without them.

  1. Cms says:

It instructs an 8×11 dish, but then suggests, in notes, a 9×13???

    1. Yumna J. says:

Either size dish will work, the recipe is very versatile! Whatever you have on hand in your kitchen is perfect. Hope that helps!

  2. Dumpling says:

    This was “so good”!!!!

Didn’t have any berries, so I topped with banana slices instead. Mixed in maybe a tablespoon of brown sugar a splash of vanilla, and a bunch of extra cinnamon. It had a nice “fall” flavor!

Served with a dollop of plain Greek yogurt and just PERFECT!

All your oat recipes are supreme. Another win!

    1. Yumna J. says:

Aww, thank you so much!! Your additions sound like they made the perfect fall-flavored breakfast. Love it!!

  3. Riley says:

I thought you had a video where you added Greek yogurt to this recipe? I cannot find it. How much Greek yogurt did you add and at what point? Did you adjust the milk amount?

  4. Ashley says:

It was a bit lemony and took almost twice as long to bake for me. I wish I had added more oats and a touch of vanilla to calm down the lemon. It was still good but I would make a few adjustments before making again.

    1. Yumna J. says:

I appreciate the feedback, thank you for sharing! I personally love my lemon zest, but it can definitely be left out if it was too lemony for you. As far as the bake time goes, I’m not sure why it took twice as long but I’m happy to help you troubleshoot if you’d like to try it again!

  5. Rose says:

Can this be put together the night before and stored in the fridge and then pulled out and baked in the morning? Or will that mess with the Chia seeds since they’ll be bloomed?

    1. Yumna J. says:

I would bake the same night and just reheat in the morning. I don’t think you’ll have enough moisture with the chia seeds and the oats sucking it up in the fridge.

  6. Riley says:

What size pan should this be made in if you don’t have a 8×11

  7. Jenny says:

Honestly – the B E S T! From my teenagers to my kindergartener to my husband – we all love it (and that is a nearly impossible feat)! I’ve shared this recipe with SO many friends. As my son said it is “Phenomenal” (and he’s a picky eater!)

    1. Yumna J. says:

Aw, thank you so much, Jenny. That means a lot!

  8. Heather Campbell says:

I love how this is literally a 1 pan recipe! And it came out delicious too. Next time I’m doubling the recipe so we can have it for a few more days. Thank you!!

    1. Yumna J. says:

It’s the best, isn’t it?! Perfect for easy cleanup!

  10. Joan says:

I just made this and it was delish! The only substitution I made was to use half 2% milk and half water instead of almond milk because it’s all I had. Definitely will make this again!

    1. Yumna J. says:

So glad you liked the baked oatmeal!

  11. Christina says:

I make it all the time. So easy and my family loves it! It’s in the oven right now. Added apples cause I didn’t have enough blueberries.

    1. Yumna J. says:

Yum! I love diced apples in my oatmeal – adds such a great texture and sweetness! Thanks for sharing!

    1. Yumna Jawad says:

      That’s perfect! Thank you!!

  14. Nadia Garhy says:

Does it need to be stored in the fridge?

    1. Yumna Jawad says:

Yes! Just cover it with plastic wrap or aluminum foil and store it in the fridge. If properly covered, baked oatmeal should last 3-4 days in the refrigerator.

      1. Nadia Garhy says:

        Thank you very much

  15. Krysteena says:

Can I substitute the chia seeds at all if I can’t access them?

    1. Yumna Jawad says:

You can just leave them out of the recipe!

  16. Fatimah says:

So I made this oatmeal recipe. I used one-min oats so it stayed 35 min. in the oven to get a good consistency. I added walnuts and served w more milk, a spoonful of peanut butter and a few dark choc chips. It was so good! 😋😋😋 That was dinner for me bec I couldn’t wait for the morning!

    1. Yumna Jawad says:

I love those toppings! Breakfast for dinner is the best!

  17. Belinda says:

Love this so much!! I did not use the cinnamon or lemon zest and they were perfect. I wrap the squares in parchment and freeze. Great to meal prep on Sunday and have a week’s worth of breakfast!

Thank you! Such a great breakfast to look forward to throughout the week!

My family loves this dish. Such a great alternative to just plain oatmeal with fruit on top

    1. Yumna Jawad says:

That makes me so happy to hear! Yay!

  20. K says:

    How many grams of sugar?

    1. Yumna Jawad says:

There is about 10g of sugar per serving.

  21. Alondra says:

Hi, do you have other suggestions aside from banana? I have a food sensitivity to it sadly.

    1. Yumna Jawad says:

The banana provides moisture and sweetness to the oatmeal, but if you don’t have any on hand/ don’t enjoy them/ have a food sensitivity, you can leave them out. The recipe will just be a little less sweet without them.

      1. Cyn Thia says:

I think you could use applesauce. You’d have to experiment with the quantity to ensure it’s not too soupy.

  22. Nicollette Noel says:

This looks amazing and ❤️ healthy – I can’t wait to make this at home! I just have a question, what’s the measurment or amount per serving?

    1. Yumna Jawad says:

Thank you so much! One serving is a sixth of the recipe.

  23. Melissa says:

Can I leave the bananas out of the recipe?

    1. Yumna Jawad says:

The banana provides moisture and sweetness to the oatmeal, but if you don’t have any on hand or don’t enjoy them, you can leave them out. The recipe will just be a little less sweet without them.

  24. kate says:

SO GOOD!!! It smelled amazing! 🙂

    1. Yumna Jawad says:

That makes me so happy to hear!

  35. alice says:

When do you add the greek yoghurt and peanut butter? Befor or after cooking.
Sorry, the recipe isn’t very clear. The video on youtube shorts indcated greek yoghurt and peanut butter in the recipe. When do you add them?

    1. Yumna Jawad says:

You can add it before or after cooking, but I chose to add it before cooking!

  37. Rob Nijhof says:

    Hi Yumna!

One thing I don’t fully understand. You say “Add the frozen berries, cinnamon and lemon zest on top and remove to bake.”

Do you mean with “remove to bake” to remove the frozen berries etc. prior to putting it in the oven? Or can I just add everything and put the dish with all ingrediënts in te oven?

Hope to hear from you soon!

    Best,
    Rob

    1. Yumna Jawad says:

Thank you for pointing that out! By that, I mean add the frozen berries etc. to the baking dish and put it in the oven. So you would add everything to the baking dish and place that in the oven. Hope that clarifies!

  38. Celeste says:

I see 1g of trans fat listed in the nutritional info. Where does that come from???
    Thanks!!

    1. Yumna Jawad says:

The chia seeds from the generic nutrition calculator have a very small amount of trans fat in it, so it rounded it up to 1 gram of trans fat in this recipe.

  39. Bianca says:

Can I add in a scoop of protein powder to this? If yes, do I need more liquid? Thank you!!!!

    1. Yumna Jawad says:

Yes, you can! I haven’t tried that yet, but you might need to add some more milk, so it doesn’t turn out to dry.

  40. Stephanie says:

Do you think adapting with a different fruit would work? Thinking maybe applesauce instead of bananas and diced apples instead of berries to make it apple flavoured. Maybe add some cinnamon.

    1. Yumna Jawad says:

Yes, it will! That sounds like a delicious combo.

  53. 'Bunny Segal' says:

Can you use steel cut oats?

    1. Yumna J. says:

You can but the cooking time is different. Follow this recipe to use steel cut oats. Hope you enjoy!

  54. Ferryal says:

Can this be made without chia seeds & frozen berries? If yes do all the ingredients measurements stay the same please?

    Thank you so much.

    1. Yumna Jawad says:

Yes, you can skip the chia seeds and frozen berries. You may want to reduce the milk by 1/4 cup though since the chia seeds absorb some of that liquid. Enjoy!
