My Baked Oatmeal is So Good!

This one pan oatmeal recipe is viral trend in oatmeal on TikTok, and I just shared this viral version of it on Instagram. This is a simple baked oatmeal recipe with oats, chia seeds, mashed bananas, milk, and frozen berries. What makes it great is how the banana is mashed it the dish and everything literally goes right on on so it’s an easy one-pan breakfast idea that is so perfect for using ripe bananas.

This baked oatmeal is packed with oats, chia seeds and berries, so it’s a wholesome breakfast that has protein, fiber and even antioxidants (thank you frozen berries!) I love that it’s made in one pan so it’s easy to make and easy to clean up. And you can customize with any fruits you have on hand and any type of flavor you’d like.

You can beat this baked oatmeal for breakfast. It’s gluten-free, dairy-free, refined sugar-free, and vegan too! I hope you enjoy it as much as I do!

Ingredients You’ll Need

Ingredients to make the recipe
  • Bananas: Use two ripe bananas. Make it three if you want even. You’ll just need to add an extra ½ cup of oats.
  • Oats: Stick with rolled oats for the best texture; quick oats can make it mushy, and steel-cut oats won’t soften enough. You can also try making with my Oath Oats using a 1:1 ratio.
  • Chia Seeds: These help to bind the baked oatmeal. You can use 2 tablespoons of ground flaxseeds or even 1 or 2 eggs instead.
  • Milk: You can use any type of milk you like in this recipe – cow’s milk, almond milk, soy milk, etc. You can even use water!
  • Frozen Berries: These add sweetness and antioxidants to the oatmeal. You can use any type of frozen or fresh fruits you like in this recipe.
  • Cinnamon: I love warm cinnamon in the morning with oatmeal. This is also delicious with ground ginger, nutmeg, or cardamom.
  • Lemon Zest: This optional ingredient adds a nice tart flavor to the oatmeal.
  • Nut Butter: Swirl in ¼ cup almond or peanut butter before baking into the mix.
  • Chopped Nuts: Sprinkle ½ cup chopped walnuts, pecans, or almonds on top for an added crunch.
  • Shredded Coconut: Mix in ¼ cup unsweetened shredded coconut for a slight chew and tropical flavor.
  • Vanilla Extract: Add 1 teaspoon vanilla extract to which bumps up the overall sweetness.

How to Make Baked Oatmeal

Step 1: Mash two ripe bananas in baking dish.
Oats added on top of bananas.
Step 2: Add the rolled oats on top.
Chia seeds added to pan.
Step 3: Sprinkle the chia seeds on top.
Milk added to oat mixture.
Step 4: Pour the milk over the other ingredients and stir to combine.
Frozen berries, lemon zest, and cinnamon added on top of oatmeal and berries before baking.
Step 5: Add the frozen berries, cinnamon and lemon zest on top and pop it in the preheated oven.
Fruit oatmeal after baking.
Step 6: You’ll know it’s done when the oats have thickened and the liquid is fully absorbed.

My Best Baked Oatmeal Tips

  1. Spray the baking dish. Because you’re starting with the mashed bananas in the baking dish, it’s important to spray the baking dish before adding any ingredients to make sure that nothing sticks to the dish for easier cleanup.
  2. Mash the bananas well. There’s no sugar or maple syrup in this recipe and all the sweetness comes from the bananas. So if you mash them well it helps with even sweetness but also to distribute the moisture well so there aren’t dry baked oatmeal spots.
  3. Let the batter sit. Let the mixture rest for 10 minutes before baking to allow the oats and chia seeds to absorb liquid for a better texture.
  4. Make it quickly in the microwave. If you don’t have time to wait for it to bake in the oven, you can also make this recipe in the microwave. Just cook it on high for about two-three minutes.

How do I store and reheat baked oatmeal?

You can store your baked oatmeal in the baking dish you cooked it in. Just cover it with plastic wrap or aluminum foil and store it in the fridge for 3-4 days. To reheat, you can either microwave it for a couple of minutes or warm it up in the oven.

Can I freeze baked oatmeal?

Yes! You can freeze your baked oatmeal for up to three months. Just let it cool completely after cooking, then place it in a freezer-safe container or bag. When you’re ready to eat it, just let it thaw overnight in the fridge and reheat as desired.

What if my baked oatmeal is soggy?

This might be because of the oats to milk ratio or it wasn’t baked long enough. You can add a little oat flour or almond flour (which don’t need to be cooked) to help absorb moisture. You can also try baking it for 5 more minutes and letting it rest before you cut into it.

  • Preheat oven to 350°F. Lightly coat an 8×11 baking dish with nonstick cooking spray.
  • Use a fork to mash the bananas in the baking dish. Add the oats, followed by the chia seeds and milk. Stir to combine. Add the frozen mixed berries on top. Then sprinkle it with cinnamon and lemon zest.
  • Bake in the preheated oven until the liquid is absorbed, about 25 minutes.
  • Drizzle maple syrup on top before serving, if desired.

Notes

Storage: Store any leftover oatmeal in the baking dish tightly covered with plastic wrap or in an airtight container for up to 4 days. Reheat in the microwave or in the oven until warmed through.

    I watched a video for one pan baked oatmeal that had Greek yogurt and peanut butter in it and topped with strawberries. Is there a recipe for that? Or measurements of each? Or is it this recipe?

      Hmm not sure I know the video you’re talking about but I do have a Peanut Butter Banana Baked Oatmeal recipe you might like! It doesn’t have Greek yogurt and it’s topped with bananas but you could absolutely top with berries if you’d like. Hope that helps!!

    This was “so good”!!!!

    Didn’t have any berries, so I topped with banana slices instead. Mixed in maybe a tablespoon of brown sugar a splash of vanilla, and a bunch of extra cinnamon. It had a nice “fall” flavor!

    Served with a dollop of plain Greek yogurt and just PERFECT!

    I thought you had a video where you added Greek yogurt to this recipe? I cannot find it. How much Greek yogurt did you add and at what point? Did you adjust the milk amount?

    It was a bit lemony and took almost twice as long to bake for me. I wish I had added more oats and a touch of vanilla to calm down the lemon. It was still good but I would make a few adjustments before making again.

    Can this be put together the night before and stored in the fridge and then pulled out and baked in the morning? Or will that mess with the Chia seeds since they’ll be bloomed?

      I would bake the same night and just reheat in the morning. I don’t think you’ll have enough moisture with the chia seeds and the oats sucking it up in the fridge.

    So I made this oatmeal recipe. I used one-min oats so it stayed 35 min. in the oven to get a good consistency. I added walnuts and served w more milk, a spoonful of peanut butter and a few dark choc chips. It was so good! 😋😋😋 That was dinner for me bec I couldn’t wait for the morning!

    Do you mean with “remove to bake” to remove the frozen berries etc. prior to putting it in the oven? Or can I just add everything and put the dish with all ingrediënts in te oven?

      The chia seeds from the generic nutrition calculator have a very small amount of trans fat in it, so it rounded it up to 1 gram of trans fat in this recipe.
