Watermelon Feta Salad
Watermelon Feta Salad is a refreshing summer salad for any occasion. Cubed watermelon, tangy feta cheese, and fresh mint combine for a sweet, salty taste.

Servings: 6 servings
- ½ large watermelon cubed (about 8 cups)
- 1 Persian cucumbers sliced
- ½ small red onion thinly sliced
- 4 ounces crumbled feta cheese
- 2 tablespoons fresh mint chopped, plus more for garnish
Add the watermelon to a large bowl. Add the cucumber, red onion, feta, and mint.
In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Garnish with more fresh mint and serve cold.
My Top Tip: After tossing, chill your salad in the fridge for at least 30 minutes. This allows the flavors to meld together (and keeps the salad cool and refreshing).
Storage: You can store any leftover watermelon feta salad in an airtight container in the fridge for up to 4 days (but I think it tastes best within 2 days).
