Watermelon Feta Salad

Watermelon Feta Salad is a refreshing summer salad that has a sweet-and-salty taste and so festive for summer cookouts, potlucks and picnics.

Ingredients

  • ½ large watermelon cut in squares (about 8 cups)
  • 1 Persian cucumbers sliced
  • ½ small red onion thinly sliced
  • 4 ounces crumbled feta cheese
  • 2 tablespoons fresh mint chopped, plus more for garnish

Dressing

Instructions

  • Place the watermelon in a large bowl. Add the cucumbers, red onions, feta cheese and mint leaves around the watermelon.
  • In a small bowl, whisk together olive oil, lime juice, honey, salt and black pepper.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Garnish with more fresh mint leaves, and serve cold.

Storage: This salad should be stored in an airtight container in the fridge. It will keep well for up to 4 days, but is best eaten within 2.
