This Pomegranate Mocktail is the perfect way to start off Thanksgiving. It's refreshing, non-alcoholic, and full of flavor, making it ideal for holiday gatherings.
Place the sage leaves, lime zest, and simple syrup in a small cup with a spout and use a muddler or the flat end or tip of a wooden spoon to gently press against the ingredients and turn in each direction to muddle them together.
Divide the sage syrup between four 16-ounce high-ball cups. Divide the pomegranate juice and reserved lime juice between the cups.
When ready to serve, add the club soda and stir gently to combine. Garnish with pomegranate arils and lime wedges and add ice if desired. Serve immediately.

Storage: The sage syrup can be made a day or two ahead, but I recommend making the pomegranate mocktail right before serving.
