How to Poach Chicken

Servings: 4 servings
- 1 pound boneless skinless chicken breasts or thighs breasts, thighs, or both
- ½ teaspoon salt
- ½ yellow onion sliced
- 4-6 garlic cloves peeled
- 5 whole black peppercorns
- 4 parsley sprigs
- 2 Fresh rosemary
- 1 bay leaf

Season chicken lightly with salt.
Transfer the chicken to a large pot or dutch oven with a lid. Add the onion, garlic, herbs and spices.
Add chicken broth to cover the chicken halfway and bring mixture to a simmer without letting it boil.
Simmer for 5 minutes, turn off heat, then cover the pot and let stand for 15 minutes.
Remove the chicken from the pot, reserve the broth for another recipe and discard the aromatics.
Allow the chicken to rest for a few minutes, then slice and serve.
Storage: Store in an airtight container for up to 4 days.
Freezing Instructions: Place the cooled chicken into a freezer safe container or bag. It will keep well for up to 3 months.
