Strawberry Popsicles
- 2 ½ cups strawberries quartered
- 2 tablespoons lemon juice
- 1 tablespoon honey
- Pinch salt
Mango Popsicles
- 2 ¼ cups mango chopped
- ¼ cup orange juice
- 1 tablespoon honey
- Pinch salt
Kiwi Popsicles
- 2 ¼ cups kiwi chopped
- 2 tablespoons lemon juice
- 1 tablespoon honey
- Pinch salt
Add the fruit, juice, honey, and salt to a blender and blend until smooth.
Divide the fruit puree between four (4-ounce) popsicle molds and cap with the tops of the molds. Freeze until firm, at least 4 hours.
To unmold, run the bottoms of the popsicle molds under hot water for about 5 seconds, then pull out the popsicles.
My Top Tip: Taste the puree before you freeze it. The sweetness of fruit varies by season and ripeness. The flavor also dulls slightly once frozen, so the puree should taste a little more intense than you want the final popsicle to be.
Storage: Popsicles can be stored right in the molds, or unmolded and individually wrapped in parchment paper, plastic wrap, or wax paper. Keep the wrapped popsicles in a resealable freezer-safe bag or airtight container. They're best within 6 weeks, but they will keep for up to 3 months.
