Grilled sweet potato wedges are a delicious and easy-to-make BBQ side dish with a crispy charred exterior that's fluffy on the inside.

Instructions

  • Place the sweet potatoes in a large bowl with the olive oil, paprika, garlic powder, salt and pepper. Toss well to combine.
  • Preheat the grill or grill pan to medium heat and oil the grates or pan.
  • Arrange the sweet potatoes on the grill. Grill for 15 minutes or until lightly charred and tender, turning halfway through.
  • Serve with mashed avocados, if desired.

Notes

The nutrition label does not include the optional mashed avocado.
Storage: Transfer completely cooled sweet potato wedges to an airtight container and store in the refrigerator for up to 4 days. Reheat on the grill over medium-high heat or in a 350°F oven for a few minutes until heated through.
