Pat the chicken tenders dry to remove any excess liquid and remove any tendons with a fork. Place the chicken in a large bowl. Add the olive oil, lemon juice, thyme, garlic powder, paprika, salt and pepper and mix until the marinade is evenly distributed on the chicken. Marinate for at least 15 minutes or up to 4 hours.
When ready to grill, preheat the grill or grill pan to medium-high heat. Place the chicken tenders directly on the grill, being careful not to overlap them. Cook for 3-4 minutes on each side, or until the chicken is cooked through and reaches 165°F internally.
Remove the chicken tenders from the grill and allow the chicken to rest for a 2-3 minutes before serving.
My Top Tip: Allow time to marinate the chicken. You want to marinade for at least 15 minutes, or up to 4 hours. That will help tenderize the chicken, make it juicier and absorb the maximum flavor. Don't go over 4 hours though since the marinade has lemon juice, which can break down the chicken and make the texture mushy.
Storage: Store any leftovers in an airtight container. They will last up to 4 days.
