Corn Salsa Recipe

This corn salsa is made with fresh or thawed, frozen corn, red onions, green chiles, jalapeños, in a cilantro lime dressing of sorts.

Ingredients

  • 1 (12-ounce) bag frozen sweet corn defrosted and drained
  • 1 (4-ounce) can diced green chilis
  • 1 jalapeño seeded and diced
  • ¼ red onion finely chopped
  • ½ cup fresh cilantro chopped
  • ¼ cup lime juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • In a serving bowl, add the defrosted corn, diced green chilis, jalapeño, red onion, cilantro, lime juice, salt and pepper, and stir to combine.
  • Taste and adjust the seasoning or add more lime juice or jalapeño pepper according to taste. Wipe the edges of the bowl. Serve immediately or refrigerate until ready to serve.

Notes

Storage: Store covered in the fridge and it will keep well for up to 4 days.
