Ingredients

Sweet Potatoes

  • 3 medium whole potatoes peeled and sliced into 1/2 inch thickness
  • 2 Tbsp butter melted
  • 1/4 tsp salt
  • Dash of cinnamon
  • 1/3 cup maple syrup
  • 1/3 cup chopped pecans
  • More maple syrup for serving if desired

Instructions

Sweet Potatoes

  • Preheat the oven to 425°F.
  • Place the sweet potatoes on a sheet pan, add melted butter, salt to taste and pinch of cinnamon.
  • Toss to coat, and then spread the sweet potatoes on the pan in a single layer, not touching.
  • Bake for 20 minutes. Then flip the potatoes, drizzle them with maple syrup, and return to the oven for 20 more minutes.
  • Potatoes will be golden brown on the outside with a nice crisp, while the insides will be soft and the syrup will be reduced and bubbly.
  • Sprinkle pecans on top, add more maple syrup if you desire, and enjoy hot and melty.

Notes

Recipe inspired by Dessert for Two
I highly recommend using parchment paper for easy removal of the sweet potatoes. Otherwise, you will need to remove them from the pan as soon as they come out of the oven so they don’t stick.
